Tender Chicken with Creamy Spinach, Mushrooms, and Melty Cheese

Juicy chicken breast tucked into a silky cream sauce with spinach and mushrooms, then finished under an irresistible layer of melted cheese — the kind of dish that wins you over with the very first forkful. The mushrooms bring deep umami notes, the spinach adds freshness and color, and the mozzarella-Parmesan topping turns beautifully golden and stretchy. It is simple to prepare, yet looks polished enough for a dinner table dressed to impress.

    Ingredients

    • Chicken breasts — 2–3 pieces, about 700g (1.5 lbs)
    • Mushrooms — 300g (10.5 oz)
    • Fresh spinach — 200g (7 oz), or 150g (5 oz) thawed and well squeezed
    • Onion — 1 small
    • Garlic — 3 cloves
    • Butter — 30g (2 tbsp)
    • Olive oil — 2 tbsp
    • All-purpose flour — 1 tbsp, for slight thickening
    • Heavy cream, 20–30% — 200ml (3/4 cup + 1 tbsp)
    • Chicken broth — 150ml (2/3 cup), or water
    • Sweet paprika — 1 tsp
    • Italian herbs — 1 tsp
    • Mozzarella — 150g (5.3 oz), grated
    • Parmesan — 40g (1.4 oz), grated
    • Salt and black pepper — to taste
    • Lemon juice — 1 tsp, optional

    Step-by-step recipe

    1. Prepare the chicken: slice the breasts lengthwise into 2 thinner cutlets, pat dry, and season with salt, pepper, and paprika.
    2. Sear the chicken: heat the olive oil in a skillet and cook the chicken over medium heat for 3–4 minutes per side, until nicely browned. Transfer to a plate.
    3. Cook the mushrooms and onion: add the butter to the same skillet, then the sliced onion and mushrooms. Sauté for 6–8 minutes, until the moisture has evaporated and the mushrooms take on a light golden edge.
    4. Add garlic and spinach: stir in the minced garlic for 30 seconds, then add the spinach. Cook just until wilted, or, if using frozen spinach, until fully heated through and any excess liquid has cooked off.
    5. Thicken the sauce: sprinkle in the flour and stir for 30 seconds. Pour in the broth, then the cream, bring to a gentle simmer, and cook for 2–3 minutes until the sauce turns smooth and creamy. If you like, add a pinch of Italian herbs and a little lemon juice.
    6. Return the chicken: nestle the seared chicken back into the sauce and spoon the sauce over the top so every piece is coated.
    7. Add the cheese topping: scatter the mozzarella and Parmesan over the chicken. Cover and cook on low for 3–4 minutes, until the cheese melts. Or place under the broiler for 2–3 minutes until golden and bubbly.
    8. Adjust the seasoning: taste and add more salt or pepper if needed. The sauce should be rich, glossy, and velvety.
    9. Serve immediately: delicious with pasta, mashed potatoes, rice, or a crusty baguette.

    Serving and storage

Serve the chicken in a shallow bowl or deep plate, generously spooning over the creamy mushroom sauce. Finish with fresh herbs if you like. Store leftovers in an airtight container in the refrigerator for up to 2 days and reheat gently over low heat, adding a splash of broth or cream to restore the sauce’s silky texture.

    Tips and variations

    • Lighter version: use 10% cream and add a little starch mixed with cold broth to thicken the sauce.
    • Gluten-free: replace the all-purpose flour with rice flour or cornstarch.
    • Cheese: mozzarella can be swapped for provolone or Monterey Jack, while Parmesan works beautifully in place of Grana Padano or Pecorino.
    • Mushrooms: oyster mushrooms or wild mushrooms work well; just cook until browned and the moisture has fully evaporated.
    • Flavor boost: a pinch of smoked paprika or 50ml (1.7 oz) of white wine, reduced before adding the cream, adds extra depth.

    Frequently asked questions

Can I replace the cream with milk?

Yes. Use 3.2–4% milk and add 1 tsp cornstarch, dissolved in cold broth. Cook the sauce until it thickens lightly.

What can I use instead of spinach?

Kale, Swiss chard, or even young beet greens work well. Remove any tough stems and cook until tender before adding the cream.

    Can I make it ahead?

Yes, the sauce and mushrooms can be made in advance and stored for up to 24 hours. Before serving, quickly sear the chicken, combine it with the sauce, melt the cheese, and serve hot.
