    Step-by-step recipe

    1. Heat the vegetable oil in a deep skillet or a heavy-bottomed pot. Sauté the chicken pieces until lightly golden, 3–4 minutes. Transfer to a plate.
    2. In the same pot, add the onion, carrots, and potatoes. Sauté for 3–4 minutes, stirring occasionally, until the vegetables take on a little colour.
    3. Return the chicken to the vegetables, then pour in the water or stock. Season with salt, black pepper, and your favourite spices.
    4. Bring to a boil, reduce the heat to medium, and cook covered until the potatoes are tender and the chicken is cooked through, 20–25 minutes. Skim off any foam if needed.
    5. Just before serving, add a little lemon juice to taste and finish generously with finely chopped parsley. Serve hot.
