Juicy Ground Beef with Caramelized Cabbage in Soy-Ginger Sauce

Made in one skillet with very little effort, it comes out juicy and gently savory, with bright notes of garlic, ginger, and sesame.     Ingredients

    • 450g (1 lb) ground beef
    • 1 tbsp sesame oil
    • 3 cups thinly shredded green cabbage
    • 1 small onion, diced
    • 3 garlic cloves, minced
    • 1 tsp freshly grated ginger
    • 1/4 tsp red pepper flakes, or to taste
    • 60ml (1/4 cup) soy sauce, or tamari for a gluten-free version
    • 1 tbsp brown sugar
    • 1 tbsp rice vinegar
    • 2 green onions, sliced
    • 1/4 cup fresh cilantro, chopped
    • 1 tbsp sesame seeds, for serving, optional

    How to Make It

    1. Heat the sesame oil in a large skillet or wok over medium-high heat. Add the ground beef and cook for 5 to 7 minutes, breaking it up with a spatula, until evenly browned and cooked through. Transfer the beef to a plate. If there is a lot of fat, carefully drain it, leaving a thin film to coat the pan.
    2. In the same skillet, cook the onion for about 2 minutes until softened. Add the garlic, ginger, and red pepper flakes, then cook for 1 more minute, stirring constantly, until fragrant.
    3. Add the cabbage, toss it with the aromatic base, and cook for 5 to 7 minutes, stirring occasionally, until tender and lightly caramelized at the edges.
    4. Return the beef to the skillet. Pour in the soy sauce, add the brown sugar and rice vinegar, and stir well. Cook for 3 to 4 minutes, just until the sauce thickens slightly and coats everything evenly.
    5. Remove from the heat and fold in the green onions and cilantro. Taste and adjust the heat or salt if needed. Serve hot, with sesame seeds sprinkled over the top if you like.
