Tender Meatball Soup with Chickpeas, Vegetables and Lemon Egg Sauce

    This soup is wonderfully delicate yet satisfying: juicy meatballs with bulgur, tender chickpeas and vegetables come together under a velvety lemon egg ‘terbiye’ finish. Ideal for a family lunch, it warms and fills without feeling heavy.

    Ingredients

    • Ground meat — 400–500 g (14–18 oz)
    • Bulgur — 3–4 tbsp
    • Potatoes — 2–3
    • Carrot — 1
    • Onion — 1–2
    • Cooked chickpeas — 1 cup
    • Water — 1.5–2 l (6–8 cups)
    • Vegetable oil — 1–2 tbsp
    • Flour, for coating the meatballs — 2–3 tbsp
    • Ground paprika — to taste
    • Salt, black pepper — to taste
    • Fresh herbs (parsley, dill) — to taste
    • For the ‘terbiye’ sauce: egg yolk — 1
    • Lemon juice — 2–3 tbsp
    • Flour — 1 tbsp

    How to cook

    1. Make the meatball mixture: combine the ground meat with bulgur, finely grated or minced onion (part of the total amount), paprika, salt and pepper. Knead thoroughly until the mixture turns sticky.
    2. Shape small walnut-sized meatballs and coat them in flour for a light crust and to help seal in the juices.
    3. In a heavy-bottomed pot, heat the oil. Add the finely chopped onion and carrot and sauté for 3–4 minutes until softened.
    4. Add the diced potatoes, stir, pour in the water and bring to a boil. Cook over medium heat until the vegetables are halfway tender, 8–10 minutes.
    5. Carefully lower the meatballs into the soup, then add the cooked chickpeas. Simmer for 12–15 minutes until the meat is cooked through and the potatoes are tender. Season with salt and pepper to taste.
    6. Make the ‘terbiye’ sauce: whisk the egg yolk with the lemon juice and flour until smooth. In a thin stream, whisk in 2–3 ladles of hot broth, stirring constantly to bring the temperature up gently.
    7. Pour the sauce back into the pot and warm over the lowest heat for 1–2 minutes, without letting it boil, until slightly thickened and silky.
    8. Remove from the heat, add the chopped herbs and, if you like, another pinch of paprika. Serve hot.

    Serving and storage

    Serve the soup right away with a wedge of lemon for freshness. Store leftovers in the refrigerator for up to 2 days. When reheating, do not let it boil so the sauce stays delicate.

    Tips and variations

    • Use beef, turkey or chicken mince; for a fuller flavour, choose a mixed mince.
    • Use fine bulgur; if you do not have any, substitute rice, semolina or breadcrumbs.
    • Canned chickpeas work well too: rinse them and add them 5–7 minutes before the end of cooking.
    • To prevent the sauce from splitting, always temper it with hot broth and do not let the soup boil after adding it.
    • For extra depth, add a pinch of cumin or dried garlic to the paprika.
    • Make-ahead option: shape the meatballs and freeze them; cook straight from frozen, adding 2–3 minutes to the cooking time.
