Crispy Potato “Drumsticks” with Chicken Filling and Cheese

Golden and crisp on the outside, tender inside, these potato “drumsticks” with juicy chicken filling and cheese make an elegant hot appetizer for family and guests. Simple ingredients, straightforward steps, and a striking presentation with no fuss.

    Ingredients

    • Potatoes — 800g (1.8 lb)
    • Chicken breast — 300g (10.6 oz)
    • Mushrooms — 150g (5.3 oz)
    • Hard cheese — 100g (3.5 oz)
    • Onion — 1
    • Garlic — 2 cloves
    • Egg — 1
    • Flour — 3 tbsp
    • Bread crumbs — 70g (2.5 oz)
    • Vegetable oil — 2 tbsp
    • Salt — 1 tsp
    • Black pepper — 1/2 tsp
    • Sweet paprika — 1 tsp
    • Parsley — 10g (1/3 oz)

    Step-by-Step Recipe

    1. Peel the potatoes, cut them into large pieces, and boil in salted water until tender, 15–18 minutes. Drain well, let off the steam, and mash into a smooth puree. Allow to cool until just warm.
    2. To the warm mashed potatoes, add the egg, 1/2 tsp salt, paprika, and flour. Mix until you have a smooth, firm dough that no longer sticks to your hands.
    3. Finely chop the onion and sauté it in 1 tbsp oil until soft. Add the finely chopped chicken breast and cook for 4–5 minutes, until the meat turns opaque.
    4. Add the finely chopped mushrooms and minced garlic, and cook for another 5–6 minutes until all moisture has evaporated. Season with the remaining salt and black pepper. Let cool.
    5. Grate the cheese on the coarse side of a grater. Finely chop the parsley and stir it into the cooled filling along with half of the cheese (reserve the rest for the center of the “drumsticks” for a stretchy, melty middle).
    6. Lightly oil your hands. Take a portion of the potato mixture, about 70–80g (2.5–2.8 oz), flatten it into a small round, place 1 tbsp of filling and a pinch of cheese in the center, seal carefully seam-side down, and shape into a “drumstick.”
    7. Coat the pieces in bread crumbs, arrange them on a parchment-lined baking sheet, and brush with the remaining oil.
    8. Bake at 200°C (392°F) for 20–25 minutes, until deeply golden. Serve hot with your favorite sauce.

    Tips and Variations

    • For a lighter texture: replace 1 tbsp of the flour with 1 tbsp potato starch — the “drumsticks” will be more delicate while still holding their shape.
    • Quick air fryer version: cook at 190°C (374°F) for 14–16 minutes, turning once.
    • For a more pronounced crust: pan-fry the “drumsticks” in 0.5 cm of oil for 2–3 minutes per side, then finish in the oven for 8–10 minutes at 180°C (356°F).
    • No mushrooms: substitute small dice of sweet bell pepper or corn.
    • Gluten-free: use rice flour and gluten-free bread crumbs or crushed cornflakes.
    • Make ahead: shape the “drumsticks” and freeze them on a tray, then transfer to a bag. Bake from frozen at 200°C (392°F) for 25–28 minutes.
    • Serving: excellent with garlic sauce, sour cream and mustard sauce, ketchup, or a cheese dip.

    Frequently Asked Questions

    • Can I make them without egg? Yes. Replace the egg with 1–1 1/2 tbsp potato starch and add 1 more tbsp flour. The mixture should be firm and easy to shape.
    • What can I use instead of bread crumbs? Panko, crushed cornflakes, or crumbs from gluten-free bread all work well.
    • Can I boil the potatoes in their skins? Yes. Boil them whole, peel, and mash — this keeps excess moisture down, and the “drumsticks” will be firmer.
    • How do I know the filling is done? All visible liquid should have evaporated, and the chicken should be opaque white with no pink spots.
    • How do I reheat them so they stay crisp? Reheat in the oven or air fryer at 180°C (356°F) for 6–8 minutes. In the microwave, the crust will soften.
