    Step-by-Step Recipe

    1. Prepare the rice: rinse until the water runs clear. Add cold water in a 1:1.8 ratio, season with a pinch of salt, and cook covered over low heat for 15–18 minutes, until tender. Let rest for 5 minutes, then fluff with a fork.
    2. Marinate the chicken: cut the fillet into bite-size pieces. Season with paprika, salt, black pepper and dried herbs, add 1 tbsp olive oil, toss well, and leave for 10 minutes.
    3. Cook the chicken: heat a skillet with 1 tbsp oil over medium heat. Cook the chicken for 4–5 minutes on one side until nicely browned, then turn and cook for another 3–4 minutes, until juicy in the center. Transfer to a plate and let it rest for a couple of minutes.
    4. Make the salad: halve the cherry tomatoes, dice the cucumbers, slice the red onion into thin feathers, and finely chop the herbs. Dress with 1 tbsp olive oil, lemon juice, a pinch of salt and, if you like, ground pepper. Toss gently.
    5. Make the tzatziki: combine the thick yogurt, minced garlic and a pinch of salt. If you like, add finely grated cucumber, squeezed well to remove excess liquid, and a little chopped herbs. Stir until smooth.
    6. To serve: spoon the rice onto a plate, add the juicy chicken alongside, a generous handful of fresh salad, and a spoon or two of tzatziki.
