How to Choose and Use Parchment Paper So It Won’t Stick or Tear

    Parchment paper looks simple, but the right sheet can save you from torn cakes, stuck cookies, and a pan scrub you did not need. The trick is knowing that not all baking paper is the same. Some sheets are lightly treated on both sides, some have a stronger silicone coating, and some are closer to plain greaseproof paper that only tolerates gentle use. If you bake often, that difference matters.

    For everyday cookies, sheet cakes, roasted vegetables, and most pastries, go for parchment labeled for baking and heat-safe at normal oven temperatures. The silicone-coated version is the safest bet because it releases better and handles sticky batters more reliably. If you are lining a mold for a wet batter or a dessert that needs a clean release, the silicone surface is worth it. Plain paper can work for dry doughs, but it is more likely to cling once sugar, syrup, or fruit juice is involved.

    Match the paper to the job

    • Cookies and biscuits: regular baking parchment is usually enough.
    • Wet cakes and brownies: choose silicone-coated parchment for easier release.
    • Sticky caramel or toffee: use parchment only if the recipe allows it and the paper is rated for the heat involved.
    • Roasting: parchment is better than paper that is not designed for oven use, because it resists grease and heat more reliably.

    The shape of the sheet matters almost as much as the type. If you shove a crumpled square into a round pan, it folds, lifts, and creates weak spots where batter can sneak underneath. Instead, cut the parchment to fit. For round pans, fold the sheet in quarters, then keep trimming the curve until it matches the base. For loaf pans and square pans, cut a base piece and, if needed, two long strips as sling handles so you can lift the baked item out cleanly.

    When working with a round cake pan, I like to grease the pan first, then press in the paper. A tiny smear of butter or oil helps the paper stay put instead of skating around while you pour. If the recipe uses a very loose batter, line the bottom and the sides. For cheesecake or sticky bar cookies, the side strips are not decorative extras — they are what prevent tearing when you lift the dessert out.

    Why parchment sticks or tears

    The most common mistake is assuming parchment is foolproof. It is not. If you use paper that is not truly oven-safe, it can dry out, curl, and become fragile. If you pour very wet batter onto an ungreased sheet, the moisture can soften the surface and glue it to the food. And if caramel or sugar syrup cools directly on the paper, it can bond so tightly that the parchment tears before the dessert releases.

    With sticky mixtures, timing matters. Let caramel set only as much as the recipe intends, then lift the whole sheet or sling while the sugar is still slightly flexible. If you wait too long, the candy becomes brittle and can drag the paper apart. For meringues, marshmallow layers, and other very tacky preparations, silicone-coated parchment is usually the better choice, but even then you should cool the food fully before peeling.

    A good rule: if a recipe is rich in sugar, butter, or moisture, do not rely on a random sheet from the drawer. Use a proper baking parchment, cut it to size, and, when in doubt, add a light grease layer under the paper. That small extra step prevents most sticking problems and makes tearing far less likely.
