Salmon with Creamy Lemon-Caper Sauce

This salmon turns beautifully golden on the outside and stays luxuriously tender inside, while the creamy lemon sauce with capers and Parmesan brings a bright, savory lift. One skillet, clear steps, and restaurant-worthy flavor at home in just half an hour.

    Ingredients

    • Salmon fillet — 1.1 lb | 500 g
    • Unsalted butter — 0.5 oz | 15 g
    • Garlic — 1 clove
    • Lemon — zest and juice of 1/4
    • Capers — 1 tbsp | 15 ml
    • Heavy cream (30%+ fat) — 3/4 cup | 200 ml
    • Parmesan — 0.7 oz | 20 g
    • Fresh parsley — to taste
    • Salt, black pepper — to taste
    • Mashed potatoes for serving — optional

    Step-by-step recipe

    1. Get everything ready: pat the salmon fillet dry with paper towels, finely chop the garlic, zest the lemon and squeeze the juice from a quarter of it, then finely chop the parsley.
    2. Heat a wide skillet over medium heat. Sear the salmon for 3–4 minutes per side, until golden and cooked through. Transfer the fish to a plate.
    3. In the same skillet, melt the butter and gently cook the garlic for 20–30 seconds, just until fragrant, without letting it brown.
    4. Add the lemon zest and juice, capers, and cream. Season with salt and pepper to taste. Simmer for 2–3 minutes, until the sauce thickens slightly.
    5. Stir in the grated Parmesan and parsley. Mix until smooth and creamy, then remove from the heat.
    6. Plate the salmon, ideally over a bed of mashed potatoes, and spoon the hot sauce generously over the top. Serve immediately.

Tip: to keep the salmon juicy, do not overcook it; the center should remain delicately pink.

    Tips and variations

    • Cream: use cream with at least 30% fat so the sauce thickens more quickly and does not split from the lemon.
    • Doneness: if you prefer a more tender salmon, remove it from the pan when the center still feels slightly springy; it will finish cooking from the residual heat.
    • Without Parmesan: swap in another hard cheese, or add 1 tsp Dijon mustard for extra depth.
    • Without capers: use finely chopped olives and add a pinch of salt for a similar savory profile.
    • Serving ideas: besides mashed potatoes, try risotto, pasta, bulgur, quinoa, or a crusty baguette.

    FAQ

Can I use a lighter cream?

Yes. Use 10–20% cream, but add 1 tsp cornstarch dissolved in 1 tbsp cold water and heat until thickened.

What can I use instead of capers if I don’t have any?

Finely chopped green olives work well, along with 1 tsp lemon juice and a pinch of salt. The flavor will stay close in its bright, briny character.

How do I know the salmon is done without drying it out?

Press the center: it should be firm yet still yield slightly, and the inside should remain delicate pink. The ideal internal temperature is about 122–126°F | 50–52°C.
