    Yield: 6 burgers

    Step-by-step method

    1. Make the dough: combine the warm milk with the yeast, chili sauce, and egg, then stir. Add the flour, salt, and crushed chips, and begin kneading. At the end, add the softened butter and knead for 7–10 minutes until smooth.
    2. First rise: transfer the dough to a greased bowl, cover, and leave in a warm place for 60–75 minutes, until noticeably expanded.
    3. Shape the buns: punch down the dough, divide into 6 equal pieces, roll into balls, and place on a parchment-lined baking sheet. Cover and proof for 40–60 minutes.
    4. Bake the buns: brush the dough rounds with beaten egg and bake at 374°F | 190°C for 15–18 minutes, until golden. Cool completely on a wire rack.
    5. Season the chicken: mix the salt, cayenne, onion powder, black pepper, and chili sauce. Coat the chicken thighs and let stand for 20–30 minutes.
    6. Prepare the flour mixture: combine the flour, salt, black pepper, and onion powder. In a separate bowl, beat the 2 eggs. Crush the nacho chips into fine crumbs.
    7. Bread the chicken: dredge the patted-dry thighs in the flour mixture, dip in the eggs, then press firmly into the nacho crumbs on all sides.
    8. Fry: heat the vegetable oil to 338°F | 170°C. Fry the chicken for 4–5 minutes per side, until crisp and cooked through (internal temperature about 165°F | 74°C). Transfer to a rack to drain excess fat.
    9. Assemble: split the buns and, if desired, lightly toast the cut sides in a dry skillet. Add the crispy chicken and your favorite toppings.
    10. Serve immediately, while the coating is at its crunchiest.

    Tips and variations

    • How to crush the chips: place them in a bag and roll over them with a rolling pin until you get a fine but not powdery crumb — this gives the coating real texture.
    • Oven or air fryer: brush the breaded chicken lightly with oil and cook at 392°F | 200°C for 15–18 minutes (turn halfway through). In an air fryer, cook at 374°F | 190°C for about 12–15 minutes.
    • Burger assembly: in addition to the chicken, add lettuce, red onion rings, pickles, and a little hot chili sauce or mayonnaise to taste.
    • Make the buns ahead: bake them a day in advance, cool, and store in a bag. Before serving, warm them slightly or toast the cut sides in a skillet.

    FAQ

Can I replace the nacho chips in the coating?

Yes, panko breadcrumbs work well. They create a light crisp crust, though the flavor is more neutral. If you like, add a pinch of cayenne and onion powder.

How long should the dough rise if the kitchen is cool?

Increase the rising time by 15–20 minutes, or use a warm spot such as an oven that is turned off but has the light on. Go by volume doubling rather than exact minutes.

Can I use chicken breast instead of thighs?

Yes, but breast meat is leaner and drier. Cut it into even pieces, marinate for at least 30 minutes, and avoid overcooking — cook to 154–158°F | 68–70°C and let it rest under foil.
