Crispy Baked Chicken and Cheese Pockets

If you want the crispest crust without deep-frying, these chicken pockets in spiced dough are exactly what you need. Juicy thigh filling with onion, peppers, and cheese is baked in a thin, elastic dough with cayenne and honey: shatteringly crisp outside, stretchy cheese and savory chicken juices inside.

    Ingredients

    Dough

    • 3 1/4 cups | 400 g all-purpose flour
    • 0.07 oz | 2 g cayenne pepper (2/3 tsp)
    • 0.21 oz | 6 g salt (1 tsp)
    • 0.28 oz | 8 g honey
    • 1 cup | 250 ml water

    Chicken Filling

    • 1 2/3 tbsp | 25 ml olive oil
    • 1.1 lb | 500 g chicken thighs, diced
    • 0.18 oz | 5 g ground cumin (1 2/3 tsp)
    • 0.21 oz | 6 g chicken seasoning (2 tsp)
    • 0.07 oz | 2 g cayenne pepper (2/3 tsp)
    • 0.11 oz | 3 g paprika (1 tsp)
    • 4.2 oz | 120 g onion, finely chopped
    • 1.8 oz | 50 g red sweet long pepper, diced
    • 1 jalapeño pepper, finely chopped
    • 3.5 oz | 100 g grated cheese

    For Serving

    • 6 slices of cheese
    • 2 tbsp | 30 ml neutral vegetable oil, for brushing

    Method

    1. Make the dough. Combine the flour, cayenne, and salt. Dissolve the honey in the water, pour into the dry ingredients, and knead into a soft, smooth dough for 5 to 7 minutes. Cover and rest for 15 minutes so the gluten can relax.
    2. Prepare the filling. Heat the olive oil in a large skillet over medium heat. Cook the onion for 2 to 3 minutes, until softened. Add both peppers and cook for 2 more minutes. Stir in the chicken, cumin, chicken seasoning, cayenne, and paprika. Cook for 6 to 8 minutes, until the chicken is cooked through and the mixture is no longer wet. Remove from the heat, cool for 5 minutes, then fold in the grated cheese.
    3. Preheat the oven to 428°F | 220°C. Line a baking sheet with parchment paper and brush it lightly with neutral oil.
    4. Assemble the pockets. Divide the dough into 6 pieces. Roll each one into a thin circle about 6 1/2 to 7 inches | 16 to 18 cm across. Spoon a portion of filling and a slice of cheese onto one half of each circle, fold over the other half, and seal the edges well. For extra crispness, prick the tops lightly with a fork.
    5. Bake for 20 to 25 minutes, until deeply golden. Halfway through baking, carefully flip the pockets and brush the tops with the remaining oil. Serve hot, letting them rest for 3 to 5 minutes so the juices settle.

    Tips and Variations

    • Adjust the heat easily: reduce the cayenne and leave out the jalapeño for a milder flavor.
    • For the crispiest crust, roll the dough thinner and bake on a preheated sheet.
    • Any good melting cheese works well: Gouda, cheddar, or pizza mozzarella.
    • You can freeze the pockets unbaked: shape them, freeze on a tray, then store in a bag. Bake from frozen for 3 to 5 minutes longer.
    • No thighs? Use breast meat, but add 1 tbsp | 15 ml extra olive oil and be careful not to overcook it.

    What to Serve With

    FAQ

Can I swap chicken thighs for breast?

Yes, breast meat works, but it is leaner. Cook it briefly over medium heat and add a little oil to keep it juicy.

How do I make the filling less spicy?

Leave out the jalapeño and cut the cayenne in half. Keep the paprika: it gives color and aroma without extra heat.

How do I reheat them and keep the crust crisp?

Reheat in a 356°F | 180°C oven for 6 to 8 minutes on a rack or preheated baking sheet. In the microwave, the crust will soften.
