    Ingredients

    • Boneless, skinless chicken thighs — 700g (1.5 lb)
    • Plain unsweetened yogurt — 200g (3/4 cup)
    • 20% cream or coconut cream — 150ml (2/3 cup)
    • Raw cashews — 70g (1/2 cup)
    • Yellow onions — 2
    • Garlic — 4 cloves
    • Fresh ginger — 20g (3/4 oz)
    • Ghee — 2 tbsp
    • Vegetable oil — 1 tbsp
    • Tomato purée (passata) — 150g (2/3 cup)
    • Water or chicken stock — 150ml (2/3 cup)
    • Lemon juice — 1 tbsp

    Step-by-Step Recipe

    1. Soak the cashews in hot water for 15–20 minutes. Drain well.
    2. Cut the chicken into 3–4 cm (1 1/4–1 1/2 in) pieces. Mix with the yogurt, lemon juice, 1/2 tsp garam masala, half the chili, and 1/2 tsp salt. Marinate for 20–30 minutes.
    3. Blend the cashews with 3–4 tbsp water until completely smooth.
    4. Slice the onions thinly. Warm the ghee and vegetable oil in a pan and cook the onions until deeply golden and caramelized, 8–10 minutes.
    5. Add the grated garlic and ginger and cook for 30–60 seconds, just until fragrant.
    6. Stir in the coriander, cumin, turmeric, cardamom, cinnamon, and bay leaf. Toast the spices for 30 seconds, stirring constantly.
    7. Add the tomato purée and sugar, then cook for 2–3 minutes until slightly thickened.
    8. Add the chicken along with its marinade, then pour in the water or stock and bring to a boil. Reduce the heat and simmer, covered, for 15 minutes.
    9. Stir in the cashew paste and cream, season with salt to taste, and cook for another 5–7 minutes until the sauce is lush and velvety.
    10. Fold in the remaining garam masala, remove from the heat, and let stand for 5 minutes. Scatter over the cilantro and serve with basmati rice.
