Air Fryer Frittata with Spinach, Cherry Tomatoes and Feta

A succulent frittata with bright cherry tomatoes, tender spinach and briny feta cooks right in the air fryer basket. It’s a practical way to serve a protein-rich, flavorful breakfast or light lunch without a skillet or a pile of dishes. Chia seeds add a delicate texture and a subtle nutty note, while Parmesan gives an appetizing crust.

    Ingredients

    • Eggs — 4
    • Cherry tomatoes — 10
    • Fresh spinach — 5.3 oz | 150 g
    • Feta cheese — 3.5 oz | 100 g
    • Tajaska olives or any other olives — 10–15
    • Grated Parmesan — 1.8 oz | 50 g
    • Chia seeds — to taste
    • Extra-virgin olive oil — to taste
    • Salt and ground black pepper — to taste

    Step-by-step recipe

    1. Line the air fryer basket with parchment paper, shaping low sides so the mixture does not run out.
    2. Arrange the fresh spinach in the basket. Crack in the eggs and gently mix them with the spinach using a fork until combined, without whisking into foam.
    3. Add the cherry tomatoes, halved, and the pitted olives. Crumble the feta over the top, then scatter with grated Parmesan and chia seeds. Drizzle with olive oil, season with salt and pepper to taste.
    4. Cook in the air fryer at 356°F | 180°C for 15–20 minutes, until golden on top and fully set in the center. If the top browns too quickly, loosely cover with parchment or foil.
    5. Let the frittata rest for 3–5 minutes, then carefully lift it out, slice and serve.

    Tips and variations

    • Pan format: instead of parchment, you can use a low heatproof dish that fits the air fryer basket.
    • Cheese swaps: feta can be replaced with bryndza, and part of the Parmesan with any hard cheese with a pronounced flavor.
    • For texture: do not beat the eggs vigorously, so the frittata stays tender rather than airy.
    • About the spinach: using frozen? Thaw it completely and squeeze out the excess moisture.
    • Add-ins: sweet pepper, spring onions or pre-cooked baby potatoes, thinly sliced, all work well.

    FAQ

Do I need to preheat the air fryer?

For a steadier result, you can preheat the basket for 2–3 minutes at 356°F | 180°C, but the recipe also works without preheating — just add a minute to the total time.

What can I use instead of chia seeds?

You can simply omit them, or replace them with a pinch of flaxseed or breadcrumbs for a light topping texture.

Why does the frittata crack or dry out?

It was most likely overcooked. Remove the frittata when the center is set but still slightly springy; let it finish resting for 3–5 minutes off the heat.
