Asian Beef Stir-Fry with Peppers and Ginger: Quick Stir-Fry

This beef stir-fry with bell peppers and ginger is a fast way to bring bold Asian flavor home. A yolk-and-starch marinade keeps the meat tender, while the soy-honey-vinegar sauce adds a balanced sweet-and-tangy finish.

    Ingredients

    For the beef

    • Beef — 1 lb | 450–500 g (thinly sliced)
    • Egg yolk — 1
    • Soy sauce — 1 1/2 tbsp | 1.5 ст. л.
    • Cornstarch — 1 tbsp | 1 ст. л.
    • Black pepper — to taste
    • Neutral oil — 1 tsp | 1 ч. л.

    Vegetables and aromatics

    • Bell peppers — 2
    • Large onion — 1
    • Garlic — 2–3 cloves
    • Fresh ginger, grated — 1 tsp | 1 ч. л.
    • Chili pepper — 1
    • Neutral oil, for frying

    Sauce

    • Soy sauce — 3 tbsp | 3 ст. л.
    • Water — 1/4 cup | 70 ml
    • Honey or brown sugar — 1 tbsp | 1 ст. л.
    • Rice vinegar — 1 tbsp | 1 ст. л.
    • Cornstarch — 1 tsp | 1 ч. л.
    • Sesame oil, optional — 1 tsp | 1 ч. л.

    Step-by-Step Recipe

    1. Prepare the beef: slice it very thinly across the grain, about 1/8 inch | 3–4 mm thick. Mix the yolk, 1 1/2 tbsp | 1.5 ст. л. soy sauce, 1 tbsp | 1 ст. л. cornstarch, a pinch of black pepper, and 1 tsp | 1 ч. л. oil. Add the beef, toss well, and let marinate for 15 minutes.
    2. Slice the vegetables: cut the peppers into strips, the onion into half-moons, the garlic into thin slices or mince it, and the chili into fine rings. Grate the ginger if you have not already.
    3. Mix the sauce: in a bowl, combine 3 tbsp | 3 ст. л. soy sauce, the water, honey or brown sugar, rice vinegar, and 1 tsp | 1 ч. л. cornstarch. Stir until smooth and set aside.
    4. Heat a wok or a wide skillet over high heat until just beginning to smoke. Add a little frying oil. Working in batches, quickly sear the beef for 1–2 minutes until the edges are well browned, without overcrowding the pan. Transfer to a plate.
    5. If needed, add a touch more oil. Briefly cook the garlic, ginger, and chili for 20–30 seconds, just until fragrant.
    6. Add the onion and bell peppers, then stir-fry for 3–4 minutes over high heat, stirring often so the vegetables stay juicy with a light bite.
    7. Return the beef to the pan and pour in the sauce. Cook for 1–2 minutes, until the sauce thickens and coats the meat and vegetables. Finish with sesame oil, if using, and toss well.
    8. Serve at once while hot and succulent — excellent with rice or noodles.

    Serving and Storage

    • Serve with jasmine or basmati rice, or with wheat or rice noodles.
    • Store leftovers in an airtight container for up to 2 days; reheat in a skillet with 1–2 tbsp | 1–2 ст. л. water over medium heat.

    Tips and Variations

    • Cut matters: the thinner the slices, the faster they cook and the more tender they stay.
    • Control the heat: remove the chili seeds or swap in a pinch of chili flakes for a milder result.
    • No honey? Use brown sugar for a deeper caramel note.
    • No rice vinegar? Apple cider vinegar works well, but use 20–30% less to keep the balance.
    • Gluten-free: use tamari or gluten-free soy sauce.
    • No wok? Cook in small batches over the highest heat possible to avoid excess moisture.

    FAQ

What cut of beef is best for this stir-fry?

Flank steak, top sirloin, tenderloin, or another tender cut works beautifully. The key is slicing it very thinly across the grain.

    Can I replace cornstarch?

Potato starch will also thicken the sauce, though it gives a more matte finish. Flour is not recommended, as it makes the dish heavy.

What can I use instead of rice vinegar?

Apple cider vinegar is a good substitute, but reduce the amount by 20–30% to preserve the soft sweet-sour balance.
