The kernels pop into airy little clouds, then dark chocolate with a touch of honey and a pinch of salt wraps each piece in a thin, glossy shell.     Ingredients

    • Popcorn kernels — 100 g (3.5 oz)
    • Neutral vegetable oil — 2 tbsp
    • Dark chocolate, 60–70% — 120 g (4.2 oz)
    • Unsalted butter — 20 g (0.7 oz)
    • Honey or powdered sugar — 1 tbsp
    • Vanilla extract — 1/2 tsp (optional)
    • Sea salt — 1/4 tsp

    How to Make It

    1. In a large heavy-bottomed pot, heat the oil over medium heat. Add 2–3 popcorn kernels: as soon as they pop, add the remaining kernels and cover with a lid.
    2. Shake the pot occasionally, keeping the lid on, so the kernels heat evenly and don’t scorch. When the popping becomes rapid, reduce the heat. Remove from the stove when the pops slow to 2–3 seconds between each one.
    3. Transfer the popped popcorn to a large bowl and remove any unpopped kernels.
    4. Melt the chocolate, butter, and honey over a double boiler or in short microwave bursts of 15–20 seconds, stirring until smooth. Stir in the vanilla and sea salt.
    5. Drizzle the warm chocolate mixture over the popcorn in a thin stream, then gently toss with a spatula until evenly coated. Add the nuts and coconut or cacao nibs, and toss again.
    6. Spread the popcorn on a parchment-lined baking sheet in a single layer and let it set for 10–15 minutes at room temperature. Serve right away or store in an airtight container.
