How to make it
- Preheat the oven to 356°F | 180°C with top and bottom heat and convection. Grease a 9- to 9.5-inch | 22–24 cm baking pan or line it with parchment.
- Brush each phyllo sheet with melted butter and layer them in the pan, slightly offsetting the sheets and leaving the edges hanging over to form a layered basket.
- Slice the zucchini into thin half-moons and quickly sauté until lightly golden. Spread over the phyllo base.
- Cut the salmon into medium cubes and arrange over the zucchini. Add the cherry tomato halves.
- Whisk the eggs with the cream, season with salt, black pepper, garlic powder and a pinch of nutmeg. Gently pour over the filling.
- Scatter the grated cheese on top and bake for 25 minutes, until golden and the custard is just set. Let stand for 5–10 minutes, then slice.

Tips and variations
- Without convection, extend baking by 5–7 minutes, watching for a deep golden crust.
- To avoid excess moisture, sauté the zucchini quickly over high heat and do not salt it before baking.
- Choose the cheese to taste: a mix of Gouda and Parmesan brings both melt and savory depth.
- Salmon can be replaced with trout; use skinless, boneless fillets.
- Add spinach, spring onions or a little lemon zest for freshness.
- Keep the phyllo covered with a kitchen towel so the sheets do not dry out while assembling.
Frequently asked questions
Can cream be replaced with milk?
Yes. Use 3.2–4% milk and add 1 tbsp of melted butter or a spoonful of sour cream for a softer texture. The flavor will be a little lighter.
Can puff pastry be used instead of phyllo?
Yes. Roll it out thinly, prick it several times with a fork and bake 5–10 minutes longer until fully cooked and golden.
Should the skin be removed from the salmon?
For fillings, skinless and boneless fillets work best. The pie bakes evenly and the pieces stay juicy and tender.
