Crispy Salmon Panko Sushi Hot Dogs

This is sushi with a vivid street-food twist: juicy salmon and a creamy filling inside, wrapped in a crisp panko shell. The key point: there is no deep-frying — the oven does all the work and gives you that irresistible crunch. Substantial, eye-catching, and wonderfully easy to eat by hand.

    Ingredients

    • For the rice: sushi rice — 4.2 oz | 120 g; rice vinegar — 1 oz | 25 g; sugar — 2 tsp | 10 g; salt — 1/2 tsp | 3 g
    • Batter and coating: flour — 2 tbsp; water — 1.8 oz | 50 g; panko breadcrumbs — 5.3 oz | 150 g
    • Also: nori sheets — 2; vegetable oil, for spraying
    • Filling: salmon — 7.1 oz | 200 g; Philadelphia cream cheese — 1 tbsp; sriracha mayo — 1 tbsp; avocado; cucumber; chuka seaweed salad; scallions; sesame seeds

    How to make it

    1. Cook the sushi rice according to the package instructions until tender. Mix the rice vinegar, sugar, and salt until dissolved, then season the hot rice. Let it cool until just warm.
    2. Divide the rice into 2 portions. Spread one portion over each nori sheet, leaving a narrow strip uncovered along one long side. Roll into an elongated bun shape, lightly moisten the nori edge with water, and seal well.
    3. Whisk the flour with the water until smooth. Dip each roll in the batter, then coat generously in panko, pressing the crumbs on lightly with your hand.
    4. Transfer to a parchment-lined baking sheet, mist lightly with vegetable oil, and bake at 392°F | 200°C for about 20 minutes, until deeply golden and crisp.
    5. While the shells bake, dice the salmon finely. Mix it with the cream cheese and sriracha mayo until the filling is silky yet holds its shape.
    6. Prepare the toppings: slice the avocado and cucumber thinly, and cut the scallions into rings.
    7. Let the hot rolls rest for 3–5 minutes, then carefully slice lengthwise without cutting through the bottom layer of nori.
    8. Fill with avocado and cucumber, add the salmon mixture, then top with chuka seaweed salad, scallions, and sesame seeds. Serve immediately while the crust is still crisp.

    Tips and variations

    • Air fryer option: cook at 392°F | 200°C for 10–12 minutes, turning once halfway through.
    • Adjust the heat to taste: vary the amount of sriracha mayo, or add thinly sliced chili for extra bite.
    • The fish can be swapped: use tuna, shrimp, or crab; for a vegetarian version, use tofu and teriyaki sauce.
    • To keep the nori from softening: fill just before serving and don’t overdo the sauce.
    • Gluten-free: use gluten-free flour and gluten-free panko, or lightly crushed rice flakes.

    FAQ

    Can I deep-fry or pan-fry them?

Yes. Fry in oil at 338°F–347°F | 170–175°C for 2–3 minutes until golden, turning as needed. Drain on a rack or paper after frying. Baking, however, gives a lighter result with less fat.

What can I use instead of salmon in the filling?

Tuna, shrimp, lightly salted trout, or a vegetarian version with tofu and teriyaki sauce all work well. The balance matters: a creamy element, a punchy sauce, and fresh vegetables.

Can I prep the rolls ahead of time?

Yes: shape and coat the rice-and-nori ‘buns’, then refrigerate in an airtight container for up to 12 hours. Bake just before serving and fill right away so the crust stays crisp.
