If you love sushi rolls but want something heartier and more striking, try these sushi sandwiches: tender rice, cream cheese, shrimp, mango and avocado tucked inside, with a golden, crisp panko shell outside. They come together quickly: just 3–4 minutes in the fryer and the perfect crust is ready.
Ingredients
For the rice
- Sushi rice — 7 oz | 200 g
- Rice vinegar — 0.9 oz | 25 g
- Sugar — 0.5 oz | 15 g
- Salt — 0.1 oz | 3 g
For the filling
- Nori — 4 sheets
- Avocado — 1 pc.
- Mango — 1 pc.
- Shrimp, cooked and peeled — 7 oz | 200 g
- Cream cheese — 2.1 oz | 60 g
- Cucumber — 1 pc.
For the batter, coating and frying
- Eggs — 2 pcs.
- Flour — 2 tbsp
- Panko breadcrumbs — 5.3 oz | 150 g
- Vegetable oil for frying — as needed
To serve
- Spicy mayo — 2 tbsp
- Unagi sauce — 2 tbsp
- Green onions, finely sliced — 2 tbsp
Step-by-step recipe
- Cook the rice: bring to a boil over high heat, then reduce to low and simmer covered for 12 minutes. Remove from the heat.
- Mix the rice vinegar with the sugar and salt until dissolved. Fold the seasoning into the hot rice, mix gently, and cool completely to room temperature.
- Prepare the filling: cut the cucumber into thin strips, the mango into slices, and the avocado into pieces. Cook and peel the shrimp in advance.
- Assemble the sandwich: spread a layer of cooled rice in the center of a nori sheet and smooth it out. Add cream cheese, mango, cucumber, shrimp and avocado. Cover with a thin layer of rice.
- With damp hands, fold the corners of the nori toward the center, shaping a tight square. For extra strength, wrap in a second sheet of nori.
- Make the batter: whisk the eggs with the flour until smooth. Dip the sandwich in the batter, then coat thoroughly in panko, pressing the crumbs firmly onto the surface.
- Heat the oil to 340–356°F | 170–180°C. Fry for 3–4 minutes until golden and crisp. Transfer to a rack or paper towels.
- Cut in half, drizzle with spicy mayo and unagi sauce, sprinkle with green onions, and serve immediately.

Tips and variations
- Rice cools best when spread in a thin layer on a tray; do not add the filling while it is still warm, or the nori will soften.
- Do not overload the filling: too much makes the sandwich loose and prevents the crust from staying crisp.
- A kitchen thermometer makes it easy to control the oil temperature; without one, look for active but not aggressive sizzling and even browning.
- Without deep-frying: you can shallow-fry in 1/4–1/2 in | 0.5–1 cm of oil, turning once; the crust will be thinner.
- Filling variations: lightly salted salmon, tuna, crab sticks, tamago omelet or tofu; for a less sweet version, replace the fruit with cucumber and avocado.
FAQ
Can I make sushi sandwiches without deep-frying?
Yes. Shallow-fry in 1/4–1/2 in | 0.5–1 cm of oil in a skillet, turning once, or bake at 392°F | 200°C for 10–12 minutes, lightly sprayed with oil. The crust will be less airy than in the deep-fried version.
What can I use instead of shrimp in the filling?
Lightly salted salmon, tuna, crab sticks, tamago omelet or spicy marinated tofu all work well. Keep the balance of creamy, fresh and juicy elements.
How do I keep the sandwich from falling apart?
Cool the rice completely, work with damp hands, do not overload the filling, and always wrap with a second sheet of nori. After coating, press the panko on firmly so it forms an extra shell.
