Dubai Chocolate Cake Pops with Pistachios and Crisp Kadayif

These cake pops are the viral Dubai chocolate dessert in a refined form: a tender pistachio center, a satin-smooth chocolate shell, and the fine crackle of golden kadaif. No baking, minimal ingredients, maximum pleasure.

    Ingredients

    • 2.1 oz | 60 g kadaif dough (thin pastry threads)
    • 3 tbsp | 45 ml sunflower oil
    • 7 oz | 200 g pistachio paste
    • 7 oz | 200 g dark or milk chocolate (couverture)

    Step-by-step recipe

    1. Prepare the crunch: separate the kadaif into short threads. Heat a skillet over medium heat and pour in the sunflower oil.
    2. Add the kadaif and, stirring constantly, toast for 4 to 6 minutes until evenly golden. Transfer to a paper towel and let cool completely, then gently crush into fine crumbs.
    3. Shape the filling: roll the pistachio paste into 12 even balls. If desired, skewer them on cake pop sticks or wooden skewers. Freeze for 15 to 20 minutes until firm.
    4. Melt the chocolate over a bain-marie or in short bursts in the microwave, stirring until smooth. Tempering is optional, but it gives a cleaner shine and a better snap.
    5. Assembly: dip each pistachio ball into the melted chocolate, let the excess drip off, then immediately roll in the kadaif crumbs. Place on parchment.
    6. Allow the chocolate to set at room temperature for 15 to 20 minutes, or chill in the refrigerator for about 10 minutes. Serve right away or store in an airtight container.

    Serving and storage

Serve the cake pops slightly chilled so the chocolate and kadaif deliver that crisp, lively snap. Keep for up to 3 days in the refrigerator in a tightly sealed container; let stand 5 to 10 minutes at room temperature before serving.

    Tips and variations

    • Shape: if the paste is soft, freezing before dipping is essential so the balls keep their form.
    • Chocolate: use couverture or a good-quality chocolate bar with at least 31% cocoa butter for reliable setting.
    • Texture: crush the kadaif into fine crumbs so it coats the chocolate evenly and stays crisp longer.
    • No sticks: the cake pops can also be served without skewers, like truffles.

    FAQ

What can I use instead of kadaif dough if I can’t find it?

The closest substitute is very finely crushed and lightly dried vermicelli, or crushed wafers/phyllo toasted until golden. The flavor will differ, but the crunch remains.

    Can I use white chocolate?

Yes, white chocolate works, but it is sweeter and more sensitive to overheating. Melt it over very low heat and stir thoroughly to avoid lumps.

Do I need to temper the chocolate?

Not strictly, but tempering gives a brighter shine, a more pronounced snap, and better resistance to melting at room temperature. It is still delicious without tempering; just keep it refrigerated.
