    • Arugula — 0.9 oz | 25 g
    • Persimmon — 1
    • Jamón — 2.8 oz | 80 g
    • Version 2: guacamole, tomatoes, and shrimp
    • Avocado — 1
    • Parsley — 0.4 oz | 10 g
    • Lime juice — 1 tbsp
    • Salt — a pinch
    • Black pepper — a pinch
    • Peeled shrimp — 7.1 oz | 200 g
    • Cherry tomatoes — 8
    • Version 3: pesto, mozzarella, and tomatoes
    • Pesto — 3 tbsp
    • Mini mozzarella — 5.3 oz | 150 g
    • Cherry tomatoes — 8
    • Arugula — 0.9 oz | 25 g

    How to Make It

    1. Prepare the toasts. Slice the baguette into 0.4-0.6 in | 1-1.5 cm pieces. Brush the cut surfaces with 2 tbsp olive oil and toast in a dry skillet for 2-3 minutes per side until golden, or bake for 6-8 minutes at 392°F | 200°C. If desired, gently rub the hot toasts with a halved garlic clove.
    2. Version 1. Spread the toasts with cream cheese, add a little arugula, arrange thin slices of persimmon, then top with strips of jamón. Press lightly.
    3. Version 2. Make the guacamole: mash the avocado with a fork, then add finely chopped parsley, lime juice, salt, and pepper. Quickly sauté the shrimp in 1 tbsp olive oil for 1-2 minutes per side until pink. Spread the toasts with guacamole, add halved cherry tomatoes, and top with 1-2 shrimp.
    4. Version 3. Spread the toasts with pesto, add a little arugula, then finish with mini mozzarella and halved cherry tomatoes.
    5. To serve. Arrange the bruschetta on a large platter, alternating the varieties. Serve immediately while the toasts are still crisp.

    Serving and Storage

Assemble the bruschetta just before serving so the toasts stay crisp. The toasts can be made ahead: cool completely and store in an airtight container for up to 24 hours. Cover the guacamole tightly with plastic wrap and refrigerate for 4-6 hours. Keep the shrimp and sliced toppings chilled, then assemble the appetizer 10 minutes before serving.

    Tips and Variations

    • No persimmon? Use ripe pear, fig, or mango for the same bright sweet-salty contrast with the jamón.
    • Any cured ham will work in place of jamón; for a more delicate flavor, try bresaola.
    • Lactose-free version: swap the cream cheese and mozzarella for hummus or cashew spread.
    • Gluten-free: use a gluten-free baguette or rice toasts.
    • Vegetarian version: omit the jamón and shrimp, and add marinated artichokes, olives, or roasted peppers.

    FAQ

Can I prepare bruschetta in advance?

Prepare the toasts, guacamole, and sliced toppings ahead of time, but assemble just before serving so the base stays crisp.

What can I use instead of lime in the guacamole?

Lemon juice works well. Add a pinch of grated zest for a brighter aroma.

    Which shrimp are best?

Peeled tiger shrimp or king shrimp are ideal. If using cooked frozen shrimp, warm them for only 30-60 seconds so they do not dry out.
