Fluffy Homemade Pita on the Skillet — Pocket Bread Without an Oven

    This fluffy homemade pita is cooked on a dry skillet and puffs beautifully, forming a neat pocket for filling. No oven is needed: just a few simple steps, a little patience for proofing, and you will have fresh, tender bread on the table, ideal for shawarma, kebabs, falafel, or breakfast sandwiches.

    Ingredients

    • All-purpose flour — 350 g (12 oz)
    • Warm water — 220 ml (scant 1 cup)
    • Instant dry yeast — 5 g (1 1/2 tsp)
    • Sugar — 1 tsp
    • Salt — 1 tsp
    • Olive oil — 1 tbsp for the dough + 1 tsp for greasing
    • Flour for dusting — 2 tbsp

    How to Make Pita on the Skillet

    1. In a bowl, combine the warm water, sugar, and yeast. Let stand for 5–10 minutes, until lightly foamy.
    2. Add the flour, salt, and olive oil. Knead into a soft, slightly sticky dough, 7–10 minutes by hand or about 5 minutes in a mixer.
    3. Lightly grease a bowl with 1 tsp oil, transfer in the dough, cover, and let rise in a warm place for 45–60 minutes, until doubled in size.
    4. Punch down the dough, divide it into 6 equal pieces, and shape into balls. Cover and rest for 10 minutes.
    5. Roll each ball into a circle 14–16 cm (5 1/2–6 1/4 in) wide and about 4–5 mm thick, dusting the work surface with flour as needed.
    6. Heat a heavy dry skillet over medium-high heat for 3–5 minutes.
    7. Place a round on the skillet. Cook for 40–60 seconds, until bubbles appear and the bottom is lightly golden.
    8. Flip and cook for another 40–60 seconds; the pita should puff noticeably and form a pocket. If needed, cover with a lid for 20–30 seconds.
    9. Transfer to a towel to keep it soft. Repeat with the remaining rounds.

    Serving and Storage

    Serve warm, splitting the edge with a knife to open the pocket. Fill it with just about anything: chicken with tahini sauce, grilled vegetables, falafel, hummus, or cheese with herbs. Store cooled pita in a bag for up to 2 days, or freeze for up to 2 months. Reheat in a dry skillet for 30–60 seconds.

    • For the best puff, you need high heat and even thickness — roll from the center outward.
    • If the skillet is not hot enough, the pita will brown but may not form a pocket — let it heat longer.
