Golden Potato Pie with Eggs, Processed Cheese and Vegetables

Rich, fragrant and deeply comforting, this crustless pie starts with baby potatoes as the base, then bakes with eggs, processed cheese, hard cheese, sweet pepper and corn. The result is a juicy center and a beautifully golden crust, all made in one baking dish.

    Ingredients

    • Boiled baby potatoes — 10–12 pcs.
    • Chicken eggs — 4–5 pcs.
    • Processed cheese in individual squares — 5–6 pcs.
    • Bell pepper, red and yellow — 1–2 pcs., cut into strips
    • Canned corn — 3–4 tbsp, drained
    • Hard cheese — 70–100 g (2.5–3.5 oz), grated
    • Salt, black pepper, favorite spices — to taste

    Step-by-Step Recipe

    1. Preheat the oven to 190 °C (374 °F). Line a baking dish with parchment.
    2. Arrange the boiled baby potatoes in the dish and gently press each one with a potato masher to form an even base layer.
    3. Carefully crack the eggs over the potato layer, spacing them out evenly.
    4. Scatter the processed cheese squares over the surface.
    5. Add the bell pepper strips and corn kernels.
    6. Top with the grated hard cheese, then season with salt, pepper and spices.
    7. Bake for 15–20 minutes, until the cheese has melted and the eggs are set; the whites should turn opaque. Remove from the oven, rest for 3–5 minutes, slice into portions and serve hot.

    Tips and Variations

    • If you do not have baby potatoes, use regular boiled potatoes sliced into rounds.
    • Adjust the egg doneness by timing: for soft yolks, bake closer to 15 minutes; for fully set yolks, go up to 20 minutes.
    • You can replace processed cheese with ricotta, cream cheese or soft cottage cheese.
    • Add herbs such as leeks, parsley or dill — sprinkle over just before serving.
    • Leftovers reheat nicely in a dry skillet under a lid; the crust will turn golden again.

    FAQ

Can I use regular potatoes instead of baby potatoes?

Yes. Boil larger potatoes in their skins until tender, cool them, peel and slice into rounds. Layer them in the dish, overlapping slightly, and press gently.

What can I use instead of processed cheese if I do not have any?

Cream cheese, ricotta or soft cottage cheese all work well. Spoon small dollops over the surface before adding the hard cheese.

How do I know when the eggs are done?

The whites should be fully opaque and set, while the yolks will be either slightly soft after 15–17 minutes or fully firm with a longer bake of 18–20 minutes.
