    • Salt — 1 tsp (or to taste)

    • Egg yolks — 2
    • Hard cheese (kefalotyri/Parmesan), grated — 70 g (3/4 cup)

    Step-by-Step Recipe

    1. Prepare the eggplant: Slice lengthwise into 8–10 mm thick (1/3 inch) planks. Lightly salt and let stand for 20–30 minutes, then pat dry with paper towels.
    2. Roast the eggplant: Preheat the oven to 220°C (425°F). Arrange the slices on baking sheets, brush with olive oil, season with pepper, and roast for 15–20 minutes until soft and lightly browned, turning once.
    3. Make the meat sauce: Heat 2 tbsp oil over medium heat. Cook the finely chopped onion for 5 minutes until translucent, then add the garlic and cook for 30 seconds more.
    4. Add the ground meat, breaking it up with a spatula, and cook for 6–8 minutes until browned. Pour in the wine and cook until almost fully reduced, 2–3 minutes.
