    Ingredients

    Step-by-Step Recipe

    1. Heat the oil or ghee in a deep sauté pan. Add the onions and cook over medium heat, stirring often, until evenly golden and crisp.
    2. Scoop out about one-third of the fried onions for the nut paste and set aside 1–2 tbsp for garnish. Leave the rest in the pan.
    3. Add the bay leaf, cinnamon stick, and cardamom pods to the onions. Toast the spices for 30–40 seconds, just until fragrant.
    4. Add the chicken pieces and cook for 5–7 minutes, until they lose their raw color and pick up a light golden edge.
    5. Season with salt, coriander, paprika, cumin, and the ginger-garlic paste. Stir well and cook for 1 minute.
    6. Stir in the yogurt, reduce the heat to medium, and cover. Simmer for 8–10 minutes, until the chicken is about halfway cooked.
    7. In a blender, process the reserved fried onions with the almonds, cashews, poppy seeds, and water until smooth.
    8. Add the paste to the pan, stir, and cook for 5 minutes so the sauce thickens and turns silky.
    9. Pour in the milk and, if using, the kewra water. Cook for another 5–7 minutes over low heat, until the sauce reaches your desired consistency. Remove from the heat and let rest for 5 minutes.
    10. Serve topped with the reserved fried onions and fresh cilantro.
