    Ingredients

    Step-by-Step Recipe

    1. Preheat the oven to 180°C (356°F). Grease a 22 cm (9-inch) round cake pan with butter and line the base with parchment paper.
    2. Peel and core the apples, then cut them into small cubes. Set aside.
    3. In a bowl, combine the flour, baking powder, salt, shredded coconut, and cinnamon.
    4. In another bowl, whisk the eggs with the sugar until the mixture lightens in colour. Pour in the melted butter, slightly cooled, add the vanilla and milk, and mix well.
    5. Add the dry ingredients to the wet mixture in 2–3 additions, stirring gently until smooth. Fold in the apples.
    6. Transfer the batter to the pan and level the surface. Bake for 40–50 minutes, or until a skewer inserted in the centre comes out clean. Cool for 10–15 minutes in the pan, then remove and let cool completely on a wire rack.
    7. For the caramel: in a saucepan, combine the sugar and water and heat over medium heat without stirring until deep amber. Remove from the heat and carefully pour in the warm cream in a thin stream, whisking constantly. Add the butter and a pinch of salt, then whisk again until smooth. Let the caramel cool slightly and thicken.
