Juicy Louisiana-Style Grilled Chicken Drumsticks

    These Louisiana-style chicken drumsticks are all about succulent meat, a deep golden, caramelized crust, and that unmistakable Southern swagger: smoked paprika, thyme, oregano, and a pinch of cayenne. Little effort, bold flavor, and reliable results on any grill.

    Ingredients

    • Chicken drumsticks — 1.2 kg (2 lb 10 oz)
    • Vegetable oil — 2 tbsp
    • Lemon juice — 2 tbsp
    • Worcestershire sauce — 1 tbsp
    • Apple cider vinegar — 1 tbsp
    • Smoked paprika — 2 tbsp
    • Brown sugar — 1 tbsp
    • Sea salt — 1 1/2 tsp
    • Granulated garlic — 1 tsp
    • Onion powder — 1 tsp
    • Dried thyme — 1 tsp
    • Dried oregano — 1 tsp
    • Ground black pepper — 1/2 tsp
    • Cayenne pepper — 1/2 tsp (to taste)
    • Tabasco sauce — 1/2 tsp (optional)
    • Oil for greasing the grill grate — 1 tbsp
    • Lemon for serving — 1/2 lemon, cut into wedges

    How to make

    1. Mix the marinade: in a bowl, combine the oil, lemon juice, Worcestershire sauce, vinegar, paprika, brown sugar, salt, garlic and onion powder, thyme, oregano, black pepper, cayenne, and Tabasco. Stir until smooth. Set aside 2 tbsp of the marinade in a clean bowl for brushing during grilling.
    2. Prepare the chicken: pat the drumsticks dry with paper towels, then place them in the bowl with the marinade and turn well so every piece is thoroughly coated.
    3. Marinate for 60 minutes in the refrigerator, or up to 12 hours for a deeper flavor. Remove the chicken 20 minutes before cooking so it can come closer to room temperature.
    4. Preheat the grill to 180–200°C (356–392°F) and set up two heat zones: direct and indirect. Clean the grate and oil it well.
    5. Sear over direct heat for 3–4 minutes per side until nicely browned. Move the drumsticks to indirect heat, close the lid, and cook for another 20–25 minutes, turning occasionally and brushing with the reserved marinade. They’re done when the internal temperature reaches 74°C (165°F) near the bone, or the juices run clear.
    6. Rest the drumsticks for 5 minutes under foil so the juices redistribute.
    7. Serve with lemon wedges and fresh herbs, and if you like, add grilled corn or a light salad.

    • No grill: bake on a rack in the oven at 200°C (392°F) for 35–40 minutes, then finish under the broiler or with convection for a crisp crust.
    • Heat level: reduce the cayenne and Tabasco, or swap part of the smoked paprika for sweet paprika.

      Yes, bone-in thighs work well too. Increase the indirect cooking time by 5–8 minutes, and aim for 74°C (165°F) inside.
    • Do I need to remove the skin?
      No. The skin helps lock in moisture and gives you that flavorful, crisp exterior. Any excess fat can be trimmed after cooking.
    • How long can I marinate them?
      Anywhere from 30 minutes to 12 hours. Don’t go longer: the lemon juice and vinegar can make the texture too soft.
    • Why are the drumsticks sticking to the grate?
      The grate may not be hot enough or may not be clean. Heat the grill properly, scrub and oil the grate, and only turn the chicken once a crust has formed.
