    Method

    1. Prepare the ingredients: rinse and drain the beans; remove the seeds from the peppers and slice into strips; finely chop the onion and garlic.
    2. Combine the mince with the egg, breadcrumbs, half the onion and garlic, then season with salt, black pepper, paprika, and coriander. Mix until the texture becomes cohesive and even.
    3. With damp hands, shape the mixture into 12–14 meatballs and lightly coat them in flour, shaking off any excess.
    4. Heat the oil in a deep skillet over medium heat and brown the meatballs on all sides for 4–5 minutes. Transfer to a plate.
    5. In the same pan, cook the remaining onion for 2–3 minutes, add the bell pepper, and cook for another 4 minutes. Stir in the garlic and warm through for 30 seconds.
    6. Add the tomato paste, stir well, and cook for 1 minute. Pour in the passata and stock, add the bay leaf, bring to a boil, and adjust the seasoning if needed.
    7. Return the meatballs to the sauce, reduce the heat to low, cover, and simmer for 15 minutes.

    9. Remove from the heat, discard the bay leaf, season to taste, scatter over the parsley, and let rest for 5 minutes.
