Oven-baked salmon with potatoes, mushrooms, and red pepper is a warm, vivid, and exceptionally juicy dinner made on a single sheet pan. The vegetables roast first until tender and lightly golden, then the fish goes in, brushed with a fragrant blend of olive oil, pomegranate syrup, and lemon juice. Minimal effort, maximum flavor.
Ingredients
- Salmon (fillet or steaks) — 1.3 lb | 600 g
- Potatoes — 3–4 medium
- Button mushrooms — 4–5
- Red sweet pepper (pointed, tipo ‘kapia’) — 1
- Yellow onion — 1
- Lemon — 1
- Garlic — 3 cloves
- Sweet paprika — 1 tsp | 1 tsp
- Olive oil — 3 tbsp | 3 tbsp (2 tbsp for the vegetables + 1 tbsp for the fish)
- Pomegranate syrup — 1 tbsp | 1 tbsp
- Salt and black pepper — to taste
How to Make It
- Preheat the oven to 400°F | 200°C. Line a baking sheet with parchment paper or lightly grease it with oil.
- Prepare the vegetables: cut the potatoes into large wedges, slice the mushrooms, cut the pepper into strips, and slice the onion into half-moons. Crush the garlic with the flat side of a knife.
- Toss the vegetables with 2 tbsp olive oil, the garlic, sweet paprika, salt, and pepper. Spread in a single layer and roast for 20 minutes, until lightly browned.
- While the vegetables are in the oven, pat the salmon dry with paper towels. Mix 1 tbsp olive oil, the pomegranate syrup, and 1 tbsp lemon juice (from half the lemon). Season with salt and pepper, then brush the mixture over the salmon.
- Remove the sheet pan, stir the vegetables, and spread them apart to make room. Nestle the salmon on top of the vegetables. Slice the remaining lemon into thin rounds and arrange them alongside.
- Roast for another 12–15 minutes, until the salmon is juicy and just opaque at the center. For extra browning, switch on the broiler for 2–3 minutes.
- Let the dish rest for 3–5 minutes. Serve with the pan juices spooned over the top; fresh herbs are a lovely finish.
Serving
Serve the salmon straight from the sheet pan with the roasted vegetables, lemon wedges, and a fresh salad. A yogurt-and-herb sauce or a thick narsharab-style pomegranate sauce pairs beautifully with the sweet-tart notes.

Tips and Variations
- Pomegranate syrup can be replaced with honey or maple syrup, plus a pinch of lemon zest for brightness.
- Watch the salmon carefully so it stays moist: cooking time depends on thickness. A 1 to 1.2 in | 2.5–3 cm fillet takes about 12 minutes at 400°F | 200°C.
- Swap in seasonal vegetables: broccoli, cauliflower, carrots, or zucchini all work well, keeping the total weight about the same.
- If you prefer a deeper crust on the potatoes, extend the first roasting stage to 25 minutes.
- Use parchment paper or a baking mat so the vegetables don’t stick and brown more evenly.

Frequently Asked Questions
What can I use instead of pomegranate syrup in the marinade?
Honey or maple syrup works well, with 1–2 tsp balsamic vinegar. The mixture gives a sweet-tart balance and a beautiful glaze.
How do I know the salmon is done?
The flesh turns opaque and flakes easily with a fork. The internal temperature at the thickest part should be about 122–126°F | 50–52°C for a juicy result.
Can I use frozen salmon?
Yes, but thaw it completely on a shelf in the refrigerator first and pat it dry so it roasts well and doesn’t release excess moisture.
