Juicy Turkish meatballs with vegetables baked in ‘kiremit’

These Turkish-style meatballs with vegetables take their cue from ‘kiremit’ clay dishes: tender minced-meat logs are baked over a fragrant bed of peppers, mushrooms, and garlic, generously coated with tomato sauce, then finished under a golden cheese crust. You do not need ceramic ramekins — any ovenproof dish will do.

    Ingredients

    • Meat mince — 500–600 g (1.1–1.3 lb)
    • Bread crumbs — 3–4 tbsp
    • Onion — 1–2 pcs, finely chopped
    • Fresh herbs (parsley, dill) — a small bunch, chopped
    • Water — 30–50 ml (2–3 tbsp)
    • Button mushrooms — 150–200 g (5.3–7 oz), sliced
    • Bell peppers (red and green) — 2 pcs, cut into strips
    • Garlic — 2–3 cloves, minced
    • Tomato sauce — 1 cup (250 ml)
    • Hard cheese (kashar or mozzarella) — 100 g (3.5 oz), grated
    • Salt, black pepper, and spices — to taste

    Step-by-step recipe

    1. Preheat the oven to 200°C (392°F). In a large bowl, combine the mince, bread crumbs, finely chopped onion, herbs, salt, pepper, and your favorite spices. Add the water and knead well until the mixture is smooth and slightly tacky.
    2. Shape the meat mixture into evenly sized oblong meatballs.
    3. In a separate bowl, mix the mushrooms, bell pepper strips, and minced garlic. Season with a pinch of salt and pepper.
    4. Spread the vegetable mixture over the bottom of individual clay dishes or one ovenproof baking dish. Arrange the meatballs tightly on top and spoon over the tomato sauce.
    5. Bake for 30–35 minutes, until the meat is cooked through and the vegetables are tender. Remove the dish, scatter over the grated cheese, and return to the oven for another 5–7 minutes, until the cheese melts and turns lightly golden.

    Tips and variations

    • Spices: for a Turkish note, add paprika, smoked paprika, sumac, a pinch of cumin, and dried oregano.
    • Meat: beef, a beef-pork blend, or turkey all work well. The higher the fat content, the juicier the result.
    • Sauce: if the sauce is thick, loosen it with 2–3 tbsp water. If it tastes sharp, balance it with a pinch of sugar.
    • Vegetables: swap button mushrooms for oyster mushrooms, and replace part of the pepper with zucchini or eggplant, sliced thinner.
    • Dishware: if you do not have individual dishes, use one 20×30 cm (8×12 in) baking dish and serve straight from the pan.

    FAQ

Which spices work best for these meatballs?

The classic combination is paprika, black pepper, dried oregano, and a pinch of cumin. Add a little hot pepper or chili flakes if you like more heat.

Can I make this without ‘kiremit’ clay dishes?

Yes, use any ovenproof baking dish or a rimmed sheet pan. The key is to build the vegetable base so the meatballs stay juicy as they bake.

What can I use instead of tomato sauce or cheese?

You can replace the sauce with strained tomatoes or roasted tomato purée seasoned with a pinch of sugar and salt. Any good melting cheese works well: mozzarella, gouda, or sulguni.
