    Ingredients

    For the salad:

    • Beetroot, boiled or roasted — 400g (14 oz)
    • Feta — 120g (4 1/4 oz)
    • Arugula — 70g (2 1/2 oz)
    • Cucumber — 1
    • Red onion — 1/2
    • Pine nuts — 30g (1 oz)
    • Fresh mint — 5g (0.2 oz)

    For the dressing:

    • Extra virgin olive oil — 3 tbsp
    • Fresh orange juice — 60ml (1/4 cup)
    • Apple cider vinegar — 1 tbsp
    • Honey — 1 tsp
    • Dijon mustard — 1 tsp
    • Salt — 1/2 tsp
    • Ground black pepper — 1/4 tsp

    Step-by-step method

    1. Toast the pine nuts in a dry skillet for 2–3 minutes, until golden and fragrant. Remove from the heat and let cool.
    2. Peel the beetroot and cut into wedges or 1.5–2 cm (1/2–3/4 in) cubes.
    3. Slice the cucumber into half-moons, the red onion into thin feathers, and finely chop the mint.
    4. Make the dressing: whisk together the olive oil, orange juice, apple cider vinegar, honey, Dijon mustard, salt, and pepper until emulsified.
    5. In a large salad bowl, combine the arugula, beetroot, cucumber, and onion. Drizzle with half the dressing and toss gently.
    6. Add the crumbled feta and toasted pine nuts, pour over the remaining dressing, and finish with fresh mint.
    7. Serve immediately, or chill for 10 minutes to let the flavours settle.
