    Ingredients

    • Boneless, skinless chicken thighs — 700g (1.5 lbs)
    • Yellow onion — 1

    Step-by-step recipe

    1. Prep the ingredients: dice the onion and bell pepper, cut the carrot and celery into small pieces, and mince the garlic. Roughly chop the cilantro and cut the lime in half.
    2. Heat the oil in a wide pot over medium heat. Add the onion, carrot, and celery. Cook for 5–6 minutes, until softened.
    3. Add the bell pepper and garlic, and cook for 1–2 minutes more, until fragrant.
    4. Stir in the cumin, smoked paprika, oregano, and ground chili. Toast the spices for 30 seconds, stirring constantly.
    5. Pour in the chicken broth, add the bay leaves and chicken thighs. Bring to a boil, then reduce to a gentle simmer and cook for 20 minutes, until the chicken is cooked through.
    6. Transfer the chicken to a plate with tongs and shred it with two forks.
    7. Add the tomatoes, corn, and beans to the pot, draining and rinsing the beans first. Return the shredded chicken to the soup.
    8. Season with salt and pepper, then simmer for 5–7 minutes so the flavors meld. Remove the bay leaves.
