Moroccan Sardine Tagine with Vegetables and Charmoula

    Ingredients

    • Fresh sardines (or other small fish), cleaned and boned — 1–1.2 kg (2.2–2.6 lb)
    • Potatoes — 3–4, sliced
    • Yellow onions — 2, sliced into rings
    • Bell peppers (red and green) — 2, sliced into rings
    • Tomatoes — 3, sliced
    • Lemon — 1, sliced
    • Olive oil or vegetable oil — 3–4 tbsp
    • Green olives — 1/2 cup
    • Whole hot chili peppers — 1–2
    • For the marinade (charmoula): fresh herbs (parsley and cilantro) — 1 bunch, garlic — 3–4 cloves, spices (paprika, cumin, ground coriander, salt, black pepper) — to taste, water — 1/4 cup, lemon juice — 2 tbsp

    Step-by-Step Recipe

    1. Prepare the base: pour a little oil into the bottom of a tagine or a deep ovenproof dish. Layer in the onions, then the potatoes and bell pepper rings.
    2. Make the charmoula: finely chop the herbs and crush the garlic. Combine the herbs, garlic, paprika, cumin, ground coriander, salt and pepper with the lemon juice and water until you have a smooth, fragrant paste.
    3. Marinate the fish: coat each sardine fillet in the charmoula so the fish is well seasoned.
    4. Assemble the tagine: arrange the sardines over the vegetables in a circle. Top with tomato and lemon slices, then add the whole hot peppers. Spoon over any remaining charmoula.
    5. Cover and simmer over low heat for 35–40 minutes, until the potatoes are tender and the fish is just cooked through. Add the green olives during the last 3–5 minutes.
    6. Serve immediately, spooning over the pan juices. Finish with a scattering of fresh herbs, if you like.
