- Fresh lemon juice — 1 tbsp (15 ml)
- Unflavored powdered gelatin — 3 tsp (10 g)
- Cold water, for blooming — 1/4 cup (60 ml)
Garnish
- Mixed berries (strawberries, raspberries, blueberries, etc.) — 9 oz (250 g)
- Berry puree or seedless jam — 2 tbsp (optional)
- Fresh mint — a few leaves
How to make
- Line a muffin tin with paper liners. This makes unmolding tidy and effortless.
- Pulverize the crackers to fine crumbs. Mix with the melted butter and a pinch of salt until it resembles wet sand.
- Divide the crumbs among the liners and press firmly with the bottom of a glass. Chill 10–15 minutes to set the crust.
- Sprinkle the gelatin over the cold water and let it bloom for 10 minutes. Gently warm until fully dissolved (water bath or quick microwave bursts). Cool to lukewarm.
- Beat the room‑temperature cream cheese with powdered sugar, vanilla, and lemon juice until smooth and lightly aerated.
- Whip the cold cream to soft peaks, then fold it into the cheese mixture with a spatula.
- With the mixer running low or while stirring constantly, stream in the dissolved gelatin. Work promptly so the mixture stays silky.
