One-Skillet Meatballs with Vegetables and Pasta — Quick Family Dinner

    A complete family dinner in one pan: tender meatballs, juicy vegetables, and pasta gently simmered together until the flavors meld into a creamy, savory sauce. Minimal dishes, maximum comfort — just the kind of weeknight cooking that feels effortless and generous.

    Ingredients

    • Ground meat — 400–500 g (14–18 oz), shaped into small meatballs
    • Tomatoes — 2–3 pcs, large, whole or halved
    • Zucchini — 1–2 pcs, cut into large batons
    • Garlic — 4–5 cloves, whole or minced
    • Onion — 1–2 pcs, small onions left whole
    • Penne or rigatoni pasta — 300–350 g (10.5–12.3 oz), cooked
    • Vegetable oil — for frying
    • Spices: paprika, salt, black pepper, dried herbs — to taste
    • Fresh herbs — a small bunch
    • Cream cheese or cream — 2–3 tbsp
    • Water — 50–100 ml (3–7 tbsp), as needed

    How to make it

    1. Prepare the ingredients: cut the zucchini into large batons, leave the onion whole or halve it, and peel the garlic. Shape the ground meat into small meatballs.
    2. Heat the vegetable oil in a deep skillet. Add the tomatoes, zucchini, garlic, onion, and meatballs. Pour in a little water, cover, and simmer for 15–20 minutes over medium heat, until the vegetables are tender and the meat is cooked through.
    3. Using a masher, gently crush the tomatoes, garlic, and onion right in the skillet so their juices come together into a single sauce. Keep the meatballs intact.
    4. Season with salt, paprika, black pepper, and dried herbs. Stir in the cream cheese or cream until the sauce turns silky and creamy. Add the finely chopped herbs and mix through.
    5. Add the cooked pasta, toss well so the sauce coats every piece, and warm through for 2–3 minutes. Serve immediately.

    • Instead of cream cheese, use heavy cream 20–33% or ricotta; for a richer sauce, add 1–2 tbsp grated hard cheese.
