    Ingredients

    Pistachio Paste

    • 100 g (3.5 oz) unsalted pistachios
    • 65 g (1/3 cup) superfine white sugar
    • 1 egg white
    • 20 ml (1 1/3 tbsp) water

    Brownie Batter

    • 125 g (1/2 cup + 1 tbsp) unsalted butter
    • 150 g (5.3 oz) dark chocolate
    • 160 g (3/4 cup + 1 tbsp) superfine white sugar
    • 8 g (1 packet) vanilla sugar
    • pinch of salt
    • 1 egg
    • 1 egg yolk
    • 90 g (3/4 cup) all-purpose flour
    • 10 g (1 tbsp) cocoa powder

    Cookie Dough

    • 85 g (6 tbsp) unsalted butter
    • 50 g (1/4 cup) light brown sugar
    • 50 g (1/4 cup) granulated sugar
    • 8 g (1 packet) vanilla sugar
    • pinch of salt
    • 1 medium egg
    • 150 g (1 1/4 cups) all-purpose flour
    • 3 g (3/4 tsp) baking powder
    • 100 g (3.5 oz) chocolate, milk or dark, chopped

    Step-by-Step Recipe

    1. Pistachio paste. Place the pistachios, white sugar, egg white, and water in a food processor. Blend until you have a smooth, thick paste. Set aside.
    2. Brownie batter. Melt the butter and dark chocolate together over a bain-marie, then remove from the heat and let cool slightly. Stir in the white sugar, vanilla sugar, and salt. Add the egg and egg yolk, mixing until smooth. Sift the flour and cocoa over the mixture and fold gently until just combined, without overmixing. Transfer the batter to a piping bag or a zip-top bag with the corner snipped off.
    3. Cookie dough. Melt the butter and let it cool until warm. Mix it with the brown sugar, granulated sugar, vanilla sugar, salt, and egg until smooth. Sift in the flour and baking powder, then fold to combine. Add the chopped chocolate and mix briefly until evenly distributed.
    4. Assemble. Line a 20–22 cm (8–9 inch) square baking pan with parchment paper. Spread half of the brownie batter in an even layer. Scatter spoonfuls of the cookie dough over the top. Pipe the pistachio paste into the spaces between the cookie dough pieces. Cover with the remaining brownie batter, then finish with more pieces of cookie dough on top.
    5. Bake. Preheat the oven to 175°C (347°F). Bake for 30–38 minutes, until a skewer inserted in the centre comes out with moist crumbs, not dry. Let cool completely in the pan, then lift out carefully and cut into 16 squares.
