    • Sweetener to taste (erythritol, stevia, or honey) — 2 tbsp

    Step-by-Step Recipe

    1. Prep the fruit: rinse and dry the strawberries, peel the kiwi, and slice the bananas into rounds. Have your ice pop molds and sticks ready.
    2. Make the base: in a blender, blend the yogurt, bananas, vanilla, a pinch of salt, and sweetener until smooth and creamy.
    3. Green layer: measure out 1/3 of the yogurt base, add the kiwi and lemon juice, and blend until completely smooth.

    7. Insert the sticks and freeze for at least 4–6 hours, or until fully set.
    8. Unmold: dip the molds in warm water for 10–15 seconds, then ease out the ice cream bars carefully.
    9. Serve immediately. If you like, finish with a little grated dark chocolate or shredded coconut.

    Store the finished ice cream bars in an airtight container or zip-top bag for up to 2–3 weeks. To keep the bars from sticking together, layer them with parchment. Before serving, let them stand at room temperature for 2–3 minutes so the flavor opens up and the texture softens slightly.
