Saffron Egg Biryani with Basmati and Crispy Onions

    Ingredients

    • Basmati rice — 300g (10.6 oz)
    • Chicken eggs — 6
    • Yellow onions — 2 large
    • Tomatoes — 2
    • Plain unsweetened yogurt — 100g (3.5 oz)
    • Ghee or vegetable oil — 3 tbsp + a little for the pan
    • Garlic — 4 cloves
    • Fresh ginger — 20g (0.7 oz)
    • Green chilies — 2, or to taste
    • Cumin seeds — 1 tsp
    • Garam masala — 1 tsp
    • Ground turmeric — 1/2 tsp
    • Ground red chili — 1/2 tsp, or to taste
    • Ground coriander — 1 tsp
    • Green cardamom pods — 4
    • Cloves — 4
    • Cinnamon stick — 1
    • Bay leaves — 2
    • Warm milk — 2 tbsp + saffron — 1/4 tsp (optional)
    • Fresh cilantro — 20g (0.7 oz)
    • Fresh mint — 10g (0.4 oz)
    • Lemon juice — 1 tbsp
    • Salt — 1 1/2 tsp for the rice + 1 tsp for the masala, or to taste
    • Water for boiling rice — 1500ml (6 1/3 cups)

    Step-by-Step Recipe

    1. Rinse the rice 4–5 times, until the water runs nearly clear. Cover with cold water and soak for 20 minutes, then drain well.
    2. Hard-boil the eggs for 8–9 minutes after the water comes to a boil. Cool in cold water, peel, and, if you like, lightly score them. For extra flavor, quickly fry them in 1 tbsp oil with a pinch of turmeric and chili.
    3. Slice the onions into thin half-moons. In a wide pan, heat 2 tbsp ghee/oil and cook the onions over medium heat until deeply golden, stirring often. Remove half to a plate; these will become the crisp topping.
    4. Add the garlic, ginger, and finely chopped chilies to the remaining onions. Cook for 30–40 seconds, just until fragrant.
    5. Add the chopped tomatoes and cook for 3–4 minutes, until softened. Stir in the cumin, coriander, turmeric, chili, and garam masala.
    6. Fold in the yogurt and warm through for 1–2 minutes until you have a smooth, glossy masala. Add half the cilantro and mint, along with the lemon juice. Season with about 1 tsp salt. Set aside.
    7. Bring 1500ml water to a boil in a pot with the bay leaves, cardamom, cloves, and cinnamon. Season with 1 1/2 tsp salt. Add the rice and cook for 5–6 minutes, until about 70% done and still slightly firm in the center. Drain in a colander and remove the larger whole spices if possible.
    8. If using saffron, steep the threads in the warm milk for 10 minutes.
    9. To assemble, lightly grease the bottom of a heavy lidded pot with 1 tsp ghee/oil. Add a layer of rice, then half the masala, half the eggs, and some of the crisp onions. Repeat the layers, ending with rice. Drizzle the top with the remaining ghee/oil and the saffron milk.
    10. Cover tightly with the lid; if needed, seal with foil. Cook over the lowest heat for 15 minutes. Remove from the heat and let it rest for 10 minutes.
    11. Fluff gently with a fork, scatter over the remaining herbs and crisp onions, and serve hot.
