    • Heavy cream 20% — 50 ml (2 tbsp) (optional)
    • Fresh basil — 5 g

    For the grilled cheese sandwich

    • Sandwich bread — 8 slices
    • Cheddar cheese — 200 g (7 oz)
    • Mozzarella cheese — 100 g (3.5 oz)
    • Butter — 40 g (1.4 oz) (room temperature)

    Step-by-step recipe

    1. Finely chop the onion and garlic.
    2. Warm the olive oil in a saucepan over medium heat and cook the onion for 5 minutes, until soft and translucent.
    3. Add the garlic and cook for about 30 seconds, just until fragrant.
    4. Stir in the tomato paste, smoked paprika, and chili flakes, then cook for 1 minute to wake up the spices.
    5. Add the tomatoes with their juices and pour in the broth. Stir in the sugar, season with salt and pepper, and bring to a boil.
    6. Reduce the heat and simmer for 15 minutes so the flavors can meld.
    7. Remove from the heat and blend until perfectly smooth with an immersion blender. Return to low heat.
