If your rice sometimes comes out sticky and other times pleasantly separate, the answer is not just cooking time. The texture of cooked rice is shaped by the starch inside the grain, especially the balance between amylose and amylopectin, plus how the rice was milled and processed before it ever reached your pot. Rice starch is made up of two key parts. Letting rice rest off the heat with the lid on gives steam time to equalize moisture through the pot, which helps prevent a wet top layer and a mushy bottom layer.
