Puff Pastry Strudel with Hot Dogs, Pickles and Cheese

City-style hot dog flavor in a cozy homemade format: crisp puff pastry, molten mozzarella, tangy pickles and fried onions. This strudel is easy to assemble and serve for a family dinner or a relaxed gathering — it disappears while still hot!

    Ingredients

    • Puff pastry — 1 package (14–18 oz | 400–500 g)
    • Mayonnaise — 2 tbsp
    • Ketchup — 2 tbsp
    • Hot dog sausages — 6–7 pcs.
    • Mozzarella, shredded — 5.3 oz | 150 g
    • Pickles, sliced — 4–5 pcs.
    • Fried onions — about 1/2 cup
    • Egg — 1 pc. (for brushing)
    • Black and white sesame seeds — 1 tbsp

    How to make

    1. Thaw the puff pastry according to the package instructions. Preheat the oven to 392°F | 200°C and line a baking sheet with parchment.
    2. Roll the dough into a rectangle 3–4 mm thick. Transfer to the parchment.
    3. Spread the mayonnaise and ketchup lengthwise down the center, leaving a 3–4 cm border on each side.
    4. Scatter over half the mozzarella, arrange the sausages in a single row, then add the pickles and fried onions. Finish with the remaining mozzarella.
    5. Along the long sides, make diagonal cuts into strips about 2 cm wide and braid the strudel by alternating the strips. Seal the ends well.
    6. Brush the surface with beaten egg and sprinkle with the black and white sesame seeds. Make a couple of small holes with a fork for steam to escape.
    7. Bake for 25–30 minutes, until deeply golden and crisp. Let rest for 10 minutes before slicing.

    Tips and variations

    • Cheese swap: any good melting cheese works well — Gouda, cheddar or a pizza blend.
    • Sauces: swap the mayonnaise and ketchup for mustard sauce or barbecue sauce.
    • Onions: use ready-made crispy onions, or caramelize regular onions ahead of time.
    • Individual portions: cut the dough into 6–8 rectangles and wrap each sausage separately for mini hand pies.
    • Air fryer: bake at 356°F | 180°C for 18–22 minutes, depending on your model.

    Storage and reheating

    • Refrigerator: up to 2 days in a container.
    • Reheat: in the oven or toaster oven at 338°F | 170°C for 8–10 minutes — the crust will crisp up again.
    • Freezing: shape the unbaked strudel, wrap tightly and freeze for up to 1 month. Bake from frozen, adding 8–10 minutes to the time.

    FAQ

Can I make it without egg for brushing?

Yes — brush the strudel with milk or cream instead. The sesame seeds will still adhere well, and the crust will brown nicely.

    Which sausages work best?

Classic hot dog sausages, smoked hunting sausages or milk sausages all work. What matters is moderate juiciness and a firm texture so the filling holds its shape.

Should I use yeasted or non-yeasted puff pastry?

Either kind works. With yeasted pastry, the crust is puffier; with non-yeasted pastry, it turns especially flaky and crisp.
