This hot appetizer is a real lifesaver when you need to feed family or guests quickly and well. Lavash, sausage and cheese are rolled up, coated in breadcrumbs and fried until beautifully golden — crisp outside, stretchy and tender inside.
Ingredients
- Thin lavash — 2 sheets
- Sausage, boiled or semi-smoked — 7 oz | 200 g
- Hard cheese — 5.3 oz | 150 g
- Egg — 1
- Breadcrumbs — 1/2 cup | 60 g
- Vegetable oil — 3 tbsp (for frying)
- Salt — a pinch
- Ground black pepper — to taste
- Fresh herbs, chopped — 1 tbsp (optional)
How to prepare
- Prepare the filling: grate the cheese on a coarse grater, cut the sausage into thin strips or small cubes. Finely chop the herbs.
- Unroll the lavash and spread the cheese, sausage and herbs over it, then season lightly with salt and pepper. Roll into a tight log, tucking in the edges so the filling stays in place.
- Cut the roll into pieces 1.2–1.6 in | 3–4 cm thick, or leave it whole if that is easier to fry.
- Beat the egg in a bowl with a fork. Dip each piece in the egg, then coat in breadcrumbs.
- Heat the vegetable oil in a skillet over medium heat. Fry the rolls for 2–3 minutes per side until evenly golden.
- Transfer to paper towels to remove excess oil. Serve hot with your favorite sauce — sour cream, tomato or garlic.

Tips and variations
- For a sturdier coating, let the rolls rest for 5 minutes after breading.
- You can also bake them at 392°F | 200°C for 10–12 minutes, turning once — a lighter version.
- Add a spoonful of sour cream or ranch-style dressing to the cheese filling for an even juicier center.
- Replace part of the breadcrumbs with crushed cornflakes for extra texture.
- Leftovers reheat well in a dry skillet or oven to keep the crunch.
Frequently asked questions
Can I make these without frying in oil?
Yes, bake the rolls on a parchment-lined sheet at 392°F | 200°C for 10–12 minutes until browned. Lightly spray with oil before baking for better crispness.
What can I use instead of breadcrumbs?
Crushed cornflakes, crushed baguette crumbs, bread chips or finely crushed salted crackers all work well.
What sausage and cheese are best?
Any sausage works: boiled, semi-smoked or salami. For the cheese, choose a good melting variety — Gouda, Maasdamer, Russian-style cheese or pizza mozzarella.
