Chicken in Yogurt Marinade with Lemon and Herbs

The secret to exceptionally juicy chicken is simple: thick yogurt, lemon, garlic, and Mediterranean spices. The yogurt marinade gently tenderizes the meat and helps lock in the juices as it bakes, while herbs and citrus bring bright aroma and fresh flavor.

    Ingredients

    • Chicken (thighs and drumsticks, skin-on and bone-in) — 2.6 lb | 1.2 kg
    • Low-fat Greek yogurt — 1 cup | 250 g
    • Olive oil — 2 tbsp | 30 ml
    • Honey — 1 tbsp | 15 g
    • Lemon juice — 2 tbsp | 30 ml
    • Lemon zest — 1 tsp | 2 g
    • Garlic — 4 cloves
    • Fresh parsley, chopped — 2 tbsp | 8 g
    • Salt — 1 1/2 tsp | 9 g
    • Black pepper — 1/2 tsp | 1 g
    • Paprika — 1 tsp | 2 g
    • Onion powder — 1 tsp | 2 g
    • Dried oregano — 1 tsp | 1 g
    • Dried basil — 1/2 tsp | 0.5 g
    • Cayenne pepper — 1/4 tsp | 0.5 g
    • Ground coriander — 1/2 tsp | 1 g
    • Ground cumin — 1/2 tsp | 1 g

    Step-by-Step Recipe

    1. Prepare the chicken: pat dry with paper towels. If the pieces are large, make 1–2 shallow cuts in the thickest part so the marinade can penetrate better.
    2. Mix the marinade: in a bowl, combine the yogurt, olive oil, honey, lemon juice and zest, crushed garlic, parsley, salt, pepper, paprika, onion powder, oregano, basil, cayenne, coriander, and cumin. Stir until smooth and evenly blended.
    3. Marinate: place the chicken in a zip-top bag or bowl, add the marinade, and coat each piece thoroughly. Cover and refrigerate for at least 2 hours, preferably 6–12 hours.
    4. Preheat the oven to 400°F | 200°C. Line a baking sheet with foil or parchment and set a rack on top so the fat can drip away and the skin can brown.
    5. Arrange the chicken on the rack, skin-side up, shaking off any excess marinade. Discard the remaining marinade.
    6. Bake for 35–40 minutes, until deeply golden and cooked through. The internal temperature near the bone should reach about 165°F | 75°C, and the juices should run clear.
    7. For extra-crisp skin, finish under the broiler for 2–3 minutes, watching closely so it does not overbrown.
    8. Let the chicken rest for 5–10 minutes, then serve with lemon wedges and fresh herbs.

    Tips and Variations

    • Marinating time: 2 hours is the minimum, 6–12 hours is ideal. Do not marinate longer than 24 hours or the meat may become too tangy.
    • Yogurt substitutes: buttermilk, kefir, or mazi may work. If using a thinner dairy product, reduce the lemon juice slightly.
    • Heat: adjust the cayenne to taste or swap in chili flakes.
    • Other chicken cuts: for breasts, bake 20–25 minutes at 400°F | 200°C until the internal temperature reaches 162–165°F | 72–74°C.
    • On the grill: cook over medium heat for 25–30 minutes, turning and brushing with a little oil.
    • In an air fryer: 375°F | 190°C, 25–30 minutes, without overcrowding the basket.
    • Side dishes: roasted vegetables, basmati rice, couscous, or a crisp salad all pair beautifully.

    What to Serve It With

Serve the chicken with a light herb yogurt sauce, lemon wedges, and warm pita or rustic potatoes. A fresh cucumber and tomato salad will highlight the citrus notes in the dish.

    FAQ

Can I use regular yogurt instead of Greek yogurt?

Yes, use a thick, unsweetened yogurt. If it is quite runny, reduce the lemon juice slightly so the marinade stays on the chicken.

Can I use chicken breast for this marinade?

Yes. Marinate for 1–4 hours and bake at 400°F | 200°C for 20–25 minutes, until the internal temperature reaches 162–165°F | 72–74°C. Do not overcook so the breast stays juicy.

Can I cook it without the oven, in a skillet?

Yes. Sear over medium heat for 4–5 minutes per side until browned, then cover and cook for another 8–10 minutes until done.
