Apple pie with a crispy lattice crust — juicy filling inside, an even golden crust outside. How do you make it so it never turns soggy or runny, even with the juiciest apples?
🔹 which apples to use so they don’t turn to mush
🔹 why the dough needs to be ice-cold
🔹 what temperature to bake at so the crust doesn’t stay pale
Baking pan: 10 in / ø25-26 cm
Ingredients
- Apples — 2 lb / 1 kg (about 4-5 medium apples)
- Puff pastry, yeast-free — 1 lb / 500 g (about one 17.3 oz box)
- Cornstarch — 1/4 cup / 30 g
- Flour — 1/4 cup / 30 g
- Sugar — 3/4 cup / 150 g
- Juice of half a lemon (about 1 Tbsp)
- Butter — 3 1/2 Tbsp / 50 g
- Cinnamon — 1/2 tsp
- Nutmeg — 1/3 tsp
Recipe
- Cut the apples into quarters, peel them, and remove the core.
- Cut each apple quarter into 3 more pieces.
- Put the cut apples in a bowl, drizzle with the lemon juice and 2 Tbsp (30 g) melted butter, and mix well.
- Add the cornstarch, flour, sugar, cinnamon, and nutmeg, and mix thoroughly.
- Dust your work surface with flour and roll out half of the dough to the size of your baking pan plus 1 cm (about 1/2 in) for the sides.
- Grease the baking pan with butter and lay the rolled-out dough evenly inside.
- Roll out the second half of the dough into a rectangle and cut it into 12 strips about 3/4 in (2 cm) wide; the strips should be as long as the pan, plus 1 cm.
- Spread the prepared apples over the dough, distributing them evenly across the pan.
- Lay 3 strips of dough over the apples vertically, then 3 strips horizontally, and weave them together. Add another 3 strips vertically and 3 horizontally, weaving them into a basket-like lattice.
- Trim off the excess dough around the edge, leaving about 1/2 in (1 cm).
- Twist the dough along the entire edge of the pie into a rope pattern.
- Brush the dough on top of the pie with melted butter.
- Preheat the oven to 350°F (180°C) and bake the pie for 25 minutes.
- Take the pan out of the oven, sprinkle with 1 Tbsp sugar, and bake for another 10 minutes.
- Remove the apple pie from the oven and let it cool completely. Your apple pie is ready. Enjoy!
