Juicy, bright and truly breakfast-worthy: warm bagels with cream cheese, cucumber, lightly salted salmon and ripe avocado, plus airy scrambled eggs. A little lemon juice and fresh herbs sharpen the flavour, and the whole breakfast is ready in just 15 minutes.
Ingredients
- Bagels — 2 pcs.
- Cream cheese — 2.8 oz | 80 g
- Lightly salted salmon — 4.2 oz | 120 g
- Ripe avocado — 1 pc.
- Cucumber — 1 small
- Eggs — 4 pcs.
- Milk or cream — 2 tbsp | 30 ml
- Butter — 0.4 oz | 10 g
- Lemon — 1/2 pc. (juice)
- Fresh herbs (dill, scallions) — 0.4 oz | 10 g
- Salt and black pepper — to taste
How to make it
- Prepare the ingredients: slice the cucumber thinly, peel and slice the avocado, then immediately drizzle with lemon juice. Finely chop the herbs.
- Split the bagels in half and toast them until lightly crisp and golden, either in a toaster or in a dry skillet.
- Assemble the base: spread the bottom halves of the bagels with cream cheese, then layer on the cucumber, salmon and avocado. Scatter over the herbs and, if you like, add a little more lemon juice.
- Scramble: whisk the eggs with the milk, a pinch of salt and pepper. Melt the butter in a skillet over low heat, pour in the eggs and stir continuously with a spatula until the mixture forms soft, creamy curds. Remove from the heat just before fully set — the residual heat will finish the scramble.
- To serve: cap with the top halves of the bagels and serve at once, with the warm scramble and a lemon wedge.

Tips and variations
- Choose a good avocado: it should yield slightly to gentle pressure, with the stem end lifting easily and green-cream flesh free of dark spots.
- Fish swaps: lightly salted trout or smoked mackerel work well instead of salmon. For a fish-free version, use turkey or hummus.
- Cheese options: cream cheese can be replaced with ricotta or a soft herbed cottage cheese with lemon.
- Make it lighter: reduce the cheese and butter, use 1 egg per serving, and add more cucumber and herbs.
- Gluten-free: use gluten-free bagels or suitable whole-grain rolls.
What to serve with it
- Fresh vegetables: radishes, cherry tomatoes, cucumbers.
- Drinks: drip coffee, a latte, or herbal tea with mint and lemon.
- Extras: a few capers or a pinch of chilli flakes for extra lift.
FAQ
Can I replace the lightly salted salmon?
Yes, use lightly salted trout, smoked fish or lean ham. For a plant-based alternative, choose hummus with lemon and capers.
How do I make the scramble especially tender?
Cook over the lowest heat, stirring constantly, and take the pan off just before it is fully set — it will finish from the residual warmth and stay creamy.
Can I prepare the breakfast in advance?
It is best to assemble the bagels right before serving so the avocado does not brown and the bread stays crisp. Store the sliced ingredients and herbs separately in the refrigerator for up to 24 hours.
