Corn and Double-Cheese Hot Dog — Fast and Juicy

Build the juiciest, most pull-apart hot dog: soft brioche, a deeply browned sausage, sweet corn, and a double layer of cheese — mozzarella for the stretch and cheddar for its bold flavour. Everything is finished with a punchy sauce of ketchup, mustard and mayonnaise, sharpened with pickles, red onion and honey. Ready in 20 minutes, it’s ideal for a quick lunch or a cosy snack at home.

    Ingredients

    • Brioche buns — 4 pcs.
    • Sausages — 4 pcs.
    • Canned corn, drained — 5.3 oz | 150 g
    • Mozzarella, grated — 3.5 oz | 100 g
    • Cheddar, grated — 2.8 oz | 80 g
    • Pickles — 2 pcs.
    • Red onion — 1/2 pc.
    • Ketchup — 3 tbsp
    • Mustard — 1 tbsp
    • Mayonnaise — 2 tbsp
    • Honey — 1 tsp

    How to make

    1. Sauce: finely chop the pickles and red onion. Mix with ketchup, mustard, mayonnaise and honey until smooth. Chill to let the flavours meld.
    2. Prepare the filling: drain the corn. Grate the mozzarella and cheddar separately.
    3. Cook the sausages in a dry skillet or on a grill over medium heat for 4–5 minutes, turning until evenly browned.
    4. Slice the buns lengthwise without cutting all the way through, then toast the cut sides in a dry skillet for 1–2 minutes until lightly crisp.
    5. Assemble the hot dogs: spread the sauce on the bottom of each bun, add a sausage, then top with corn and sprinkle with mozzarella and cheddar.
    6. Melt the cheese: place the hot dogs under the oven broiler for 2–3 minutes, or cover the skillet with a lid for 1–2 minutes, until the cheese has melted. Serve with extra sauce.

    Tips and variations

    • No oven: melt the cheese in a covered skillet over low heat for 1–2 minutes.
    • Cheese swaps: use provolone instead of mozzarella, and gouda or a mild white cheddar instead of cheddar.
    • Heat: add jalapeño or a little hot sauce to the sauce.
    • Buns: if you don’t have brioche, any hot dog buns or a soft baguette will work.
    • For kids: reduce the onion and mustard in the sauce.

    FAQ

Can I make the sauce without mayonnaise?

Yes. Replace the mayonnaise with thick yogurt or sour cream. The flavour will be lighter; add a pinch of salt and a little honey if needed for balance.

What can I use instead of corn in the filling?

Canned peas, sautéed sweet pepper or finely chopped tomatoes without juice will work. Try not to overload the bun with excess moisture.

How do I reheat a finished hot dog without drying out the bun?

Wrap it in foil and warm in the oven at 320°F | 160°C for 8–10 minutes, or in a dry skillet with a lid for 3–4 minutes over low heat.
