    How to Make It

    1. Prep the chicken: cut the fillets into long strips about 1/2 to 3/4 inch thick, then pat dry with paper towels.
    2. Make the marinade: whisk together the buttermilk, egg, finely grated garlic, 1 tsp salt, 1 tsp paprika, pepper, and mustard. Toss in the chicken strips and let sit for 20–30 minutes, or up to 12 hours in the refrigerator.
    3. Mix the dry coating: combine the flour, cornstarch, panko, garlic powder, 1/2 tsp salt, 1 tsp paprika, and baking powder. Stir well.
