    Step-by-Step Recipe

    1. Chill the bowl and the cream in the refrigerator for 10–15 minutes. Whip the cream to soft peaks: it should hold its shape while remaining light and billowy.
    2. Drizzle in the sweetened condensed milk and vanilla, folding gently with a spatula or mixing on low speed until smooth and fully combined, taking care not to overwhip.
    3. Pour the base into ice cream bar molds and insert the sticks. Freeze for 4–6 hours, until completely firm.
    4. Before coating, melt the chocolate over a double boiler, or in short microwave bursts, stirring until smooth and glossy and the temperature reaches about 32–34°C (90–93°F).
    5. Unmold the bars, dip each one quickly into the chocolate, let the excess drip off, and place on a sheet of parchment. The shell will set within seconds.
    6. Serve immediately or store in the freezer in an airtight container.
