Juicy Chicken Patties with Garlic and Herbs in a Skillet

These chicken patties with garlic and fresh herbs come out tender and juicy inside, with a beautifully browned crust on the outside. With just a handful of ingredients, simple seasoning, and very little time, they make an excellent quick homemade dinner.

    Ingredients

    • Ground chicken — 600–700g (1.3–1.5 lbs)
    • Onion, finely chopped — 1
    • Garlic — 2–3 cloves
    • Fresh herbs (parsley or cilantro), chopped — 1 bunch
    • Paprika, black pepper, coriander, salt — to taste
    • Vegetable oil — for frying

How to Make It in a Skillet

    1. In a large bowl, combine the ground chicken, finely chopped onion, minced garlic, and chopped herbs.
    2. Add salt, paprika, black pepper, and coriander to taste. Mix thoroughly until the mixture is smooth and slightly springy.
    3. Dampen your hands with water or a few drops of oil and shape the mixture into neat round patties.
    4. Heat a skillet with a little vegetable oil. Fry the patties over medium heat until golden brown and cooked through on both sides.

    Tips and Variations

    • For especially juicy patties, mix the meat for 1–2 minutes until slightly sticky and shape them into even-sized portions.
    • Don’t overcrowd the skillet: cook in batches so the crust turns properly golden instead of pale.
    • To bake instead of fry, arrange the patties on parchment and cook at 200°C (392°F) until browned and cooked through.
    • You can vary the seasoning: add a pinch of garlic powder or cumin for a more aromatic, slightly spiced profile.
    • The easiest way to check doneness is to cut one open: the juices should run clear and there should be no pink in the center.

    FAQ

How do I make chicken patties even juicier?

Mix the meat thoroughly until slightly sticky and don’t overcook the patties. You can also add a pinch of salt in advance and let the mixture rest for 5–10 minutes.

Can I make these without frying, in the oven?

Yes. Place the patties on a parchment-lined baking sheet and bake at 200°C (392°F) until golden and cooked through.

    Will other herbs work?

Dill, green onions, or a blend of parsley and cilantro work beautifully. Choose fresh, fragrant herbs for the best flavor.
