    How to make vegetable fritters

    1. Grate the zucchini, carrot and potatoes on the fine side of a grater.
    2. Finely chop the dill. Add it to the vegetables along with the eggs, flour, baking powder, salt, paprika and pepper. Mix well until you have a cohesive vegetable batter.
    3. Heat a skillet with plenty of oil over medium-high heat, about 7 out of 9.
    4. Drop the mixture by spoonfuls into the pan, shaping small fritters and flattening them slightly.
    5. Fry for 2–3 minutes on each side until golden brown. Transfer the finished fritters to a paper towel.
    6. For the sauce, mix the yogurt, remoulade sauce, finely chopped parsley, grated garlic, juice from 1/2 lemon and a pinch of salt.
    7. Serve the fritters hot with the yogurt sauce.

    Tips and variations

    • For the crispest crust, fry in small batches and do not overcrowd the pan.
    • If the vegetables are very juicy, gently squeeze out excess moisture from the grated mixture before combining with the remaining ingredients.
    • Add a pinch of chili or cumin for a more aromatic note.
    • You can also bake them: spoon onto a parchment-lined tray and bake at 392°F | 200°C for 18–22 minutes, turning halfway through.
    • You can replace part of the flour with semolina for a slightly denser texture.

How can I make the fritters less oily?

Fry in small batches in well-heated oil and drain on paper towels. You can also bake them at 392°F | 200°C until golden.
