Yeast Mini Loaves: Golden and Crisp in 15 Minutes of Baking

These little homemade loaves bake up with a delicate crisp crust and a tender, airy crumb. You need just five simple ingredients and a bit of patience for proofing, while the bake itself takes only 12–15 minutes at high heat. They are perfect for sandwiches, served alongside soup, or enjoyed warm in the morning with tea.

    Ingredients

    • 1 cup + 2 tbsp | 280 ml warm water
    • 3 1/3–3 1/2 cups | 400–420 g all-purpose flour
    • 1 packet instant dry yeast
    • 1 1/2 tsp salt
    • 1 tsp sugar

    Step-by-Step Recipe

    1. In a large bowl, combine the flour, sugar, salt, and instant yeast. Pour in the warm water and mix until a dough forms. Knead for 7–10 minutes until smooth and elastic.
    2. Cover the bowl and let the dough rise in a warm place for about 2 hours, until doubled in volume.
    3. Turn the dough out onto a lightly floured surface and fold it over itself a few times to strengthen the gluten.
    4. Return the dough to the bowl or a container, cover, and let it proof for 1 more hour.
    5. Transfer the risen dough to a work surface, divide into 4 equal pieces, and shape each into a ball.
    6. Form mini loaves about 5–6 in | 12–15 cm long. Lightly moisten the tops with water and make one long slash with a sharp knife.
    7. Place the loaves on a parchment-lined baking sheet. Preheat the oven to 446°F | 230°C.
    8. Bake at 446°F | 230°C for 12–15 minutes, until deeply golden and crisp.
    9. Transfer the mini loaves to a wire rack and let cool for 10 minutes before serving.

    FAQ

Can I substitute fresh yeast for dry yeast?

Yes. For 1 packet of dry yeast, use about 12 g fresh compressed yeast. Crumble it with the sugar in the warm water, let it foam for 5–10 minutes, then continue with the dough as written.

How do I get a more pronounced crisp crust?

Make the slashes with a sharp blade and place a small ovenproof dish of hot water in the oven for the first 10 minutes of baking. The steam helps create a thin, crisp crust.

Can I use whole wheat flour?

Yes, replace up to 30–40% of the flour with whole wheat flour and, if needed, add 10–20 ml more water. The texture will be denser and the flavor richer.

    Tips and Variations

    • Add the salt to the dough together with the flour: this helps the yeast work evenly and keeps the flavor balanced.
    • If the tops brown too quickly, switch to bottom heat or lower the temperature to 428°F | 220°C.
    • For a softer crust, brush the hot loaves with a thin layer of vegetable oil and cover with a towel for 5 minutes.
    • Optional toppings: sesame, poppy seeds, dried garlic, or Herbes de Provence — sprinkle on before baking.
