Potato Zrazy with Meat: Crisp Golden Crust and Juicy Filling

Golden potato zrazy with a juicy meat filling is the kind of comforting dish that smells like home the moment it hits the pan. Soft mashed potato wrapped in a crisp, bronzed crust gives way to a fragrant filling of minced meat, onion, and herbs, with every bite balancing tenderness and savory depth. Fry them gently or bake them in the oven for a lighter finish — either way, they come out hearty, satisfying, and beautifully homemade.

    Ingredients

    • Potatoes — 800 g (1.75 lbs)
    • Ground meat, pork and beef — 400 g (14 oz)
    • Onion — 1
    • Garlic — 2 cloves
    • Milk — 80 ml (1/3 cup)
    • Butter — 30 g (2 tbsp)
    • Egg — 1
    • Flour — 3 tbsp (for the potato mixture and coating)
    • Bread crumbs — 100 g (3.5 oz), optional
    • Vegetable oil — 3 tbsp, for frying
    • Dill or parsley — 10 g (1/4 oz)
    • Salt — 1 tsp, or to taste
    • Ground black pepper — 1/2 tsp
    • Sour cream, for serving — 150 g (5.3 oz)

    Step-by-step recipe

    1. Peel the potatoes, cut them into large chunks, and boil in salted water until tender, 15–18 minutes. Drain well.
    2. Mash the potatoes with the warm milk and butter until smooth, then let cool until just warm. Mix in the egg and a pinch of salt.
    3. For the filling, finely chop the onion and garlic. Sauté the onion for 3–4 minutes until soft, add the ground meat, and cook for 6–8 minutes, breaking up any clumps, until just cooked through.
    4. Season the meat with salt and pepper, stir in the garlic and finely chopped herbs, then mix well and let cool.
    5. With damp hands, take a portion of the potato mixture, about the size of a mandarin orange, dust lightly with flour, and flatten into a round patty.
    6. Place 1–2 tbsp of filling in the center, carefully pinch the edges closed, and shape into an oval zrazy.
    7. Coat the zrazy in flour or bread crumbs.
    8. Fry over medium heat in the vegetable oil for 3–4 minutes per side, until deeply golden. If needed, cover and cook for another 3–4 minutes to finish through.
    9. For a lighter version, arrange the zrazy on a baking sheet, brush lightly with oil, and bake at 200°C (392°F) for 12–15 minutes until golden.
    10. Serve hot with sour cream and fresh herbs.

    Tips and variations

    • Choose starchy potatoes; they make a firmer mash, so the zrazy hold their shape better.
    • If the potato mixture feels too soft, work in another 1–2 tbsp flour — it should be pliable but still tender.
    • For a juicier filling, add 1–2 tbsp water or broth at the end of cooking and warm through for a minute.
    • Fine flour or semolina can replace bread crumbs for a neat, even crust.
    • For a no-fry version, bake the zrazy on parchment and turn them once for even browning.
    • Try alternate fillings: mushrooms and onion, braised cabbage, cheese with herbs, or chicken with paprika.

    Serving and storage

    • Serve with sour cream, garlicky yogurt sauce, or a silky mushroom sauce.
    • Store cooked zrazy in the refrigerator for up to 2 days. Reheat in a skillet covered with a lid or in the oven at 170°C (338°F) for 8–10 minutes.
    • For freezing, shape the uncooked zrazy, freeze them on a tray, then transfer to a bag. Cook from frozen, adding 3–5 minutes to the cooking time.

    FAQ

Can I make zrazy without eggs?

Yes. Add 1–2 tbsp more flour or 1 tbsp starch. The mixture will become more cohesive and the zrazy will hold together.

What can I use instead of meat filling?

Popular options include sautéed mushrooms with onion, braised cabbage, cottage cheese with herbs, chicken breast, or turkey. Adjust the seasoning to suit the filling.

Why do the zrazy fall apart while frying?

The potato mash may be too soft, or the pan may be too hot. Let the mash cool, add a little flour, seal the edges well, and fry over medium heat with enough oil.
